Indeed, the marshmallow should be left in the dryer for several hours after the end of the cooking time. I put one in a drying tray in a special tray for marshmallow from Voltera, and the other two on baking paper, not paper, but a woven thing (I don't know what it is called correctly). The photo shows that some of the layers are damp - this is exactly the layer that dried unevenly in places on the pallet. I didn't have enough patience to finish drying) For the future, I will cook all the layers on a bedding of this or baking paper. Apparently through them, the pastila still breathes and dries better.
