About marshmallow: for a guaranteed result it is necessary to withstand the technology. One of my pastilles with pectin turned out to be ordinary, as if I had not put pectin there at all. No, it turned out to be soft and tasty, but there was not that fluffiness like pectin marshmallow and the cakes dried out more than when dried with pectin. It turned out that my mechanical thermometer was lying and I had not brought the mass to the desired temperature. So the pectin didn't work. The next time I already used an electronic thermometer, and here's what I noticed - the mass with pectin does not whip up as quickly to stable peaks as the mass without pectin. I whipped according to the usual pattern, and the mass remained sluggish, but at the same time, after removing the frame on the pallet, it kept its shape perfectly, the edges were clear even. The first two layers were exactly like that, but when whipping the third, I was distracted and the mass was whipped for a few minutes longer. The soufflé turned out to be denser than the first two cakes. When drying, I noticed that the third cake dries out faster than the first two. Not critical, of course, but it turned out to be 2 -3 mm thinner than the first two. From this, I concluded for myself that it is undesirable to beat the mass.

I think there are a lot of smears. The layers with pectin themselves are soft and delicate, a smear is needed to glue them together. Without pectin, the layers are much drier and harder, in this case the smear softens them.
In general, everything is known in comparison, next time I hope it is not far off, I will try to just slightly miss the cakes.
