Girls, I’m with the marshmallow again! This time I tried to make marshmallow with pectin! Everything as usual. I baked it, pierced it with a blender, drained a little of the juice, rubbed it through a sieve. I boiled it with pectin, cooled it down a bit, and then everything is as usual, I will not retell the whole recipe.
I dried for 17 hours (well, everyone knows that after my first failures, I prefer to dry out rather than not dry). The layers without pectin after 17 hours of drying turned out like croutons, dried out almost by half, the paper came off with difficulty, when cut in half, they crumbled slightly, always threatening to break into pieces.
The layers with pectin dried out quite a bit. After 17 hours in the dryer, they remained soft. The paper came off easily, whole, can be used next time.When cutting, the layers did not crumble, in structure they resembled a well-baked biscuit. After the final drying, I measured the height, it turned out 8.6 cm.
The paste turned out to be very soft and insanely tender. I couldn't even get such a tender marshmallow even from Antonovka. Well, just lovely, not marshmallow! I think that now I will always do with pectin, from purchased ones, at least for sure!
