So, my version of corn sticks. Technologically based on description Natasha Kubeba1 (did not brew flour, wet ingredients + dry), and the ratio of ingredients was taken from "Gold of the Incas", which I found on the links from Natasha's post. The dough is liquid, poured out of a glass with a spout.

Beat 4 eggs with 200 g of sugar, added 300 ml (instead of 500) milk and 50 g of melted butter. Then 350 g of corn flour, a pinch of salt, vanillin, 1.5 tsp. baking powder. (I didn't make flour, so I decided that 300 ml of milk would be enough).


I started with a churros panel, but without lingonberries (the younger ones don't eat). Soft ones were taken out of the MP, then a crispy crust appeared for a short time, and then they softened completely. It tastes like a cupcake. I definitely lacked the sourness. Therefore, I whipped 250 g of 20% sour cream and 2 tbsp. l. sugar, poured some of the chopsticks.

Strange children! The first to eat are creamless, although with filling it is clearly tastier! Victims of some of their stereotypes

Output: 4 tabs in a small MP = 24 sticks + 2 tabs in a large one = 24 donuts. Total: 48 pcs.
I will repeat, because ... pies - you will lick your fingers! But next time I'll try to make flour for comparison.

I started digging a recipe after I bought a "Malaysian pie" in Lenta, and here, at the Bread Maker, there is already such a recipe, it turns out

1 dough in water
200g general purpose flour
90-100g water
3st. l. vegetable oil
0.5 tsp salt
25g sugar

2 butter dough
90g flour
45-55g butter / margarine (I thought I needed more)

Prepare dough 2, roll into a ball (it rolled badly for me)
Knead dough 1 (made in a bread maker), wrap dough 2 in dough 1, roll it out (you can find videos and step-by-step recipes with variations by googling the Huaiyang method)
In general, this is some kind of close relative of the dough for Central Asian samsa, it turns out something flaky. Malaysian pies are deep-fried, but it seemed to me that there was an abundance of oils in the recipe, and the baked ones suited me perfectly. The filling is pumpkin with onions and lamb fat tail.
