I climbed into the literature to look for recipes for waffles, I have preserved from my grandmother "Home Confectioner" by A. Volkanov, 1968. I remember that waffles according to old recipes are very nutritious, and not a cheap pleasure ...

Here are the recipes from there:

Mikado Waffle Cakes

Recipes for Mikado waffle dough (4 recipes) Grind yolks and whole eggs with sugar to white, add sour cream, melted warm butter and knead easily. Knead the dough by pouring the prepared mixture into the flour little by little so that there are no lumps.
For 250 g of flour - 10 yolks, 5 proteins, 250 g of sugar, 100 g of sour cream, 100 g of butter.

Flour, yolks, powdered sugar with vanilla are ground well, while adding a little sour cream or fresh cream so that no lumps form. For 80 g of flour - 3 yolks, 25 g of powdered sugar, 250 g of sour cream or fresh cream, 1/2 vanilla powder.

The third grade of Mikado waffle dough is prepared with wine (instead of sour cream or water). (in other places it is indicated that for wine dough there is a fruit filling, while for sour cream - all sorts of derivatives of creamy vanilla fillings).
The fourth grade of Mikado waffle dough is prepared in water (instead of cream or sour cream). A small amount of baking soda is added to the dough (in any recipe, sour cream can be replaced with water).

Waffles with cream

Prepare the dough according to any of the above recipe. A cast iron square press is heated, greased with vegetable oil, a spoonful of dough is poured into it and the lid is quickly lowered. The cakes are baked on both sides for 3-4 minutes, then removed and quickly wound on a wooden stick 1.5 cm thick. The cakes immediately freeze and the finished waffle is removed from the stick. Thus, the whole mass is baked.
The finished wafer rolls are stuffed with hot custard white cream.

Waffle cake with praline cream

From the Mikado waffle dough (see above), the required amount of cakes is baked in a cast-iron square press. Then praline cream is prepared (see recipe for multi-layered mikad cake). The cakes are smeared with cream and put under a press for 15-20 minutes, after which they are cut into separate cakes of rectangular, square or triangular shape, their sides are smeared with chocolate icing.

Waffle cake with fruit filling

Wafer cakes are baked in a cast iron square press (see above). Then the filling is prepared: dishes with raspberry supplies are put on the fire and boiled down to a thick state. Glue the cakes with a hot filling, put them under a press for 20-30 minutes, and then cut them into rectangular cakes, which are covered with a thin layer of chocolate.

Non-glazed waffle cake

The required amount of wafer cakes is baked. The cakes are glued together with butter cream, pressed, and then cut into individual cakes.
Butter cream. Butter, margarine are ground with powdered sugar, diluted citric acid and any essence are added.
For 50 g butter - 50 g margarine, 200 g icing sugar and citric acid, taste essence.

Add butter, icing sugar, egg, vanilla to the flour and knead the dough, which is rubbed with your hands as best as possible.
