Girls, good morning! Cry from the heart!!!
Somehow I fell out of Temko for a long time, but then came back .. I hadn't baked in molds for a long time.
My friends and I have already had cupcakes that stick to the mold to death and do not take out. Delicious ruins !!!
I did not wash them with anything abrasive. I didn't clean it with powders, I use it very carefully.
And my girlfriend has the same garbage .. Always lubricated with sunflower oil and everything was fine.
What, they bake up to a certain point and that's it? Was it a waste? In general, I was upset ..
Scarecrow
sola19,

If you have not baked for a long time, then smearing with vegetable oil could well lead to the fact that it has dried on the surface with a film. And this film of vegetable oil is insanely sticky. My verdict: wash very well with degreaser and hot water, re-coat. Preferably not vegetable. The best lubricant I've tried is lecithin. But you have to find lecithin. I even stopped covering the trays.

I even stopped covering the opposite
Thanks, and what to cover? In the sense of parchment?

Please give me a link for lecithin grease. Is it not harmful?

Oh, I found it .. I found it !!!
Scarecrow
sola19,

Well, yes, usually with parchment for bread, pies, rolls. And now I do not cover it. I even recently made cheesecakes with sour cream filling (there the curd filling is quite plastic at first, it crawls out of all the holes) - they were ideally removed from the baking sheet.

Lecithin is a common food supplement. Made from natural raw materials. There are many places: in chocolate, for example. A very thin film is used for lubrication (I spread it directly on the baking sheet with my fingers and only a greasy shine is visible, that is, the amount is minimal).
sola19
Scarecrow, is that she?

Balm for molds

1 cup vegetable oil
0.5 cup lecithin, liquid or granules

Whisk into a homogeneous mixture in a blender, store in a jar in the refrigerator. Apply in a very thin layer with a brush. That is, dip the very tip or edge of the brush and distribute over the mold.

And where is this lecithin sold?

2 parts fat (I prefer ghee, but vegetable oil is fine)
1 part lecithin. preferably in powder. In granules, it does not diverge well. It is better to warm the fat before mixing, otherwise lecithin is hellishly viscous.

Sold in online stores (ingredients for food production, small confectionery, etc.). even in pharmacies (but there most often it is in granules). I bought in my Tula.

: hi: Thanks !!!
Loksa
And I had such a thought about vegetable oil! Natasha, you have confirmed! And where is the lecithin powder found? Today?
sola19
Loksa, I haven't found something yet ..
Svetta
Oh, girls, if you were closer, I would provide everyone with lecithin! I have his bucket! really a bucket of Argentinian soy lecithin! I thought to throw it all away, but now I will make such a lubricant. I wonder if you can freeze it?
Anna1957
Petersburgers, if you find lecithin - write here. For all relevant.

Enjoy the shopping! Did the forms appear there? Everything seemed to be sold out there.
Umka
mur_myau, Elena, worth it, but the Nordic Ware molds have not been there for a long time ...
mur_myau
Tanyulya,
I'd like a pan for pancakes (see above).
Otherwise, I can't wait for a removable panel for the pancake maker.
So at least it will be possible on gas.

Umka19,
Exactly?

Girls, I will burst into your discussion a little with info that is interesting only to residents of the Krasnodar Territory, especially Novorossiysk and nearby cities: in my friend's store there are remnants of Nordic Ware forms at prices of 2014 - "Heritage" for 6 cupcakes - 1700r., " Gifts "for 2 medium cupcakes (round + square) -1400r.," Roses "for 12 cupcakes-2000r.," Hearts "for 6 cupcakes-1600r., Pan for pancakes" Belgian waffles "for 7 pieces-1800r. Will not send, the coordinates of the store in Novorossiysk will write in a personal.

I made a pie with plum jam from Lina.

In Sochi, in the North, the prices are also low, I bought gifts there for 1300, there is also a beehive there, carved for a cupcake (I do not know the name) and a couple more, I did not remember which ones. This is the store at the turn from 12 North to Rose Street. Maybe someone needs
Oroma
Jenealis, Zhenya! And you will not have the opportunity to clarify more specifically, what else is there in addition to the above and at what price? My friend now lives in Sochi, maybe I would ask him to buy me something missing
Jenealis
Olga, I would be happy, but there is absolutely nowhere to park, and I live on the KSM, it is very difficult to get there with a child, no offense, but I cannot clarify in any way. Maybe they have a phone? Shushunya, it really is a Home Goods store. Regent uniforms were still there at the old price. True, I was there about a month ago, but they are in little demand there, gifts were waiting for me for half a year, so I'm almost sure that there are still forms there. I myself go there 2 times a year on business with documents, so I go. Otherwise, you won't get to the center ...

really store "Home Goods"
JenealisThank you for answering, tomorrow I'll call them and try to buy something through my friends, because I don't go to Sochi now. We moved from Sochi a year ago and this store was one of our favorites (I also love "Hostess" in the Gallery and on Areda, and "Everything for bars and restaurants" in Ordzhonikidze, near Festivalny "), I recommend to everyone - the prices are affordable, the assortment is huge. Now, due to business needs, we live in Novorossiysk, I also found myself a favorite store (the one with Nordic uniforms and much more) - "Mix" (Anaskoe shosse 108, you can dial in the internet), at the entrance to Novorossiysk, then , as I wrote above.

Found in the internet for information on the Sochi store "World of the House" on the North (where the Nordic forms at the old, before the crisis, price), tomorrow I'll try to call - unsubscribe. Their phone number is MTS-

Ekaterina, you misspelled ... plum jam from Lina. And make your favorite dough, not yeast.
For this form, about -70g. butter, 2 tbsp. spoons of sour cream, 1yaytsosazar-5st. spoons, baking powder, a pinch of salt, and how much flour it takes, it comes out very budgetary.
Wrong ... Chuchelka's jam! Https: //Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=430280.0
Shushunya
Not confectionery. Meatcakes in Nordic Heritage, minced meat, cutlet. They just fly off, then only rinse the forms and wipe them with a sponge, nothing needs to be scraped off.

Girls, I'll break into your discussion a little with info that is interesting only to residents of the Krasnodar Territory,
A year ago, girls ordered forms from somewhere in the Krasnodar Territory, with delivery throughout Russia by mail, or TC. Now it seems that the transfer has not become such a rarity.

pan for pancakes "Belgian waffles" for 7 pieces-1800r.

A.lenka, so that's why I wrote "for residents of the Krasnodar Territory", well, perhaps also the Crimea. This is not my own store. Someone may find it convenient to buy for themselves or for relatives, or someone will go here to have a rest and buy, etc. Moreover, there is always leftovers in online stores + shipping. In general, I found this store precisely because I was looking for a Nordic sheet for transferring cakes and muffins. And then I bought a frying pan "Bugs" in "Mix", a skewer for a grill "Cactus kebob", "Heritage", "Donuts", "Gifts", etc. I also got a 15% discount on all goods. It's like someone gets lucky. And the selling prices in the USA at Nordic remained the same, but only the exchange rate changed 2 times, so no one wants to buy them anymore. Heritage, for example, costs 52 dollars, and pans for pancakes at 47. According to the ruble exchange rate, only the purchasing (!) Price is around 3000 rubles. Therefore, I wrote where there are remnants and very good. I am grateful to the girl from Sochi, who gave me information about Sochi shops.

Shushunya, Should you add flour or purely from meat?
Shushunya
Sivana, do not need anything, just grease the molds with any fat. Minced meat ordinary cutlet - beef, pork, onion, garlic, potatoes and semolina, spices. I added a little more mushrooms there. Then she smeared the top with mayonnaise on the sharp edges for decoration. I can't insert a photo, but I wanted to boast ... I not only bake in Nordic forms, but also make jelly salads, aspic-jellied meat, cottage cheese jelly desserts, etc.

Added Sunday 03 Apr 2016 09:45

The semolina absorbs the meat juice and they shrink slightly and you can simply pull them out of the molds with your fingers.
