celery root 200-300gr

Cooking method

  • In the evening, soak a glass of chickpeas in cold water.
  • In the morning, by lunchtime, you can start cooking.
  • In a saucepan, I have 4.5 liters, pour 1.5 liters of water and pour the soaked chickpeas, put it to heat.

  • Cut off and peel the pumpkin, not cut into small pieces.
  • Peel and chop the carrots, do not grind the same
  • Do the same with a piece of celery root.

  • Pour everything into a saucepan with boiled chickpeas.
  • Cover and let the vegetables and chickpeas simmer until tender.
  • While the vegetables are boiling, peel the onion and chop it, and also separate and chop 3 celery cuttings.
  • After 30 minutes, check the vegetables in the pan for softness, if they choke with a spoon, then it's done.
  • Remove the pan from the stove and drain almost all the water into a separate container, so that you can add it later if it seems liquid.
  • Take a blender leg, punch boiled vegetables and chickpeas with it. If necessary, add a little of the drained vegetable broth.
  • Cover and set aside. I have a special saucepan, it keeps heat well, in an ordinary saucepan it is better to cover it with a towel so that the puree would sweat a little.
  • Take a frying pan, pour in and heat vegetable oil.
  • Put the chopped onion first and fry it well.
  • When the onion is ready, shake it off to the edges, and put the celery in the middle and pass it along with the onion.

  • Put the onion and celery in a saucepan to the puree, mix everything and put on the stove at the lowest power. Season with salt, add nutmeg and smoked paprika.
  • Let it simmer a little at minimum power under the lid.
  • Everything can be served, it is better with sour cream, but in fasting you can just like that. To your health!

I have a big pumpkin, I will give it to my friends and leave a quarter for myself for different purposes. In particular, I decided to make a puree soup for my beloved husband, who is now treating and inserting his teeth, and therefore he needs everything soft, but better grated.
But since I personally don’t like the smell of pumpkin, I decided to mask it in every possible way, using root and stem celery for this, as well as aromatic spices - smoked paprika and nutmeg. The main thing is not to overdo it with spices, after all, the vegetable taste should be preserved. And so that the carotenes contained in vegetables are better absorbed, add vegetable oil, on which we sprinkle onions and stalk celery.

WLAD, to your health! You know, try it when you cook it, I think you will be surprised, the pumpkin is almost not felt, the carrots rather give sweetness. Smoked paprika with nutmeg mask the pumpkin and carrot flavors very well, and the chickpeas impart some nutty flavor. I don't like pumpkin myself, but I have to eat it like that, so I'm exiled
