Ingredients

Proportions for a 5 liter can:

3. Granulated sugar 5.5 cups
4. Water 5 glasses
Proportions for a 3 liter can:
1. Gooseberry 7 glasses
2. Raisins 1 handful
3. Granulated sugar 3.8 cups
4. Water 3.5 cups

Cooking method

  • In our country house near Shatura, a gooseberry variety grows "Ural emerald".

  • We begin to make wine at the beginning of August, when the berry ripens.

  • Pour 10 glasses of berries into 5-liter jars, you can add a couple of handfuls of unwashed raisins directly from the bush without washing. Warm water (5 tbsp each), dissolve 5.5 cups of sugar in it and pour into jars. Stir the contents of the jar with a plastic spoon, the raisins will sink to the bottom of the jar, and the berries themselves will be at the top. Use a thick needle to make 15-20 holes in plastic covers.

  • Place the jars closed with these lids, if possible, on the sunny side, but not in direct sunlight. I put it on a glazed loggia.

  • After 2-3 days, the raisins will also rise to the top. Rising bubbles are evidence of the fermentation process.

  • At the beginning of the fermentation process, it is advisable to periodically stir the berries with a plastic or wooden spoon at least once every 2-3 days. A couple of times will be enough.
  • When it gets cool on the loggia, it is better to bring the banks into the apartment. By the end of October (sometimes, it happens, and a little later), the berries will drop in the jars, the liquid will become absolutely transparent, which indicates that the fermentation process is almost complete.

It is better to drain the liquid from the can into the pan through a flexible tube, for example, cambric, making sure not to capture or stir up the sediment that forms at the bottom of the can. Pour the strained wine back into clean jars and close tightly with lids without holes. Since the wine may become slightly cloudy during straining, you will have to wait 2-3 weeks for the wine to settle and become clear again. We carefully decant it into bottles through the tubes, call the guests and enjoy, sending praise to the authors of the recipe.

I put the wine right after the recipe appeared, but quite a bit, 2 liters, this year I will make a LOT, because we don't like jam, and after the freezer it is also not to the family's taste ... while it was standing under the window, I mean it I forgot, and tried it almost a year later)))) maybe time made it even better, in any case, thanks from my family for it

Also at one time I had to start making wine out of necessity, just tired of the jam. The result was surprisingly excellent, especially from the gooseberry. The gooseberries even get a little rumpled. It can be seen that the berry gave away quite a lot. We never squeeze gooseberries, it's a pity for time. I read recipes on websites where the berry is pre-squeezed or chopped, maybe even more correct, but simplicity of execution is more important to me.
As for maturity, you can, of course, do it from an immature one. but we like it more from almost ripe. There are different recipes. I have one.
