Likar Nadiya, Hope, geranium was too "strong" for me. AND bitter... Perhaps I just put in a lot when brewing. I did not feel a special taste and aroma. Although, Zachariah did not deviate from the recipe (almost). Well, he did it with stalks, and I only made of leaves. It looks like strong black tea. By color - "you can paint the boots"... I added 1/13 part to my mix "July-top of summer". At the first try, I did not feel her bitterness. Today I will pour it into storage and brew it again.
Where I really, really agree stressed. I disagree with the lack of taste. The tea has an interesting aftertaste. Good with anything sweet. I also did it without stems. Spinning in a meat grinder is very good. Some were frozen. I sometimes save up in the freezer. I didn’t make me want to mix at all, I wanted to postpone it, so that sometimes I could drink like this.
My taste may not be quite classic, I didn’t like the mono pear - that’s absolutely unambiguous. The apple tree is not very good, I wanted to mix it. Mono liked raspberries and strawberries. Raspberries are very bright. Strawberries are softer and require more dry fermentation.
I decided that I would interfere with the garden ones for 2-3 or more. I want to make a pear with currants and probably a blackberry. Blackberry pleasantly surprised me with rowan. And a lot of it. The pear smelled delicious when dried. The color is beautiful black. It will be necessary to look for currants - I am not allowed to collect them everywhere. At the weekend I will be on the Volga, I have to climb the abandoned gardens.

A dash in the table means see above !!!

Radushka, The first made melissa and marigold leaves, in the second she added flowers, tore off the flower head completely, then tore it apart. There is no smell of marigolds at all, I don't know further. but when you drink tea your mouth is chilly! I thought from mint, I just tried to brew mint, there is no chill, so they give marigolds, I think so!

And tea with lemon balm also has a chill and a slight tingling sensation! Try just a little, well, very interesting!

Girls, thank you very much for the feedback! And I want to say a huge thank you to all tea-makers many, many times, thanks to your experience and advice, we get what we get !!!! And the jars are really cool, and very inexpensive like in tea shops, if anyone was interested, I bought a dish center on the website. Only now they end quickly, the rest is in the glass.
Likar Nadiya
Granular mint has its own pleasant smell, but just dried leaves seem more aromatic to me, for now. Let's see what happens next.

Tatyana, dogwood. Withered the leaves overnight, twisted them in a meat grinder with a large grate once. Seemed dryish, medium density granules Fermented tea made from leaves of garden and wild plants (master class)
I divided the mass on purpose to show how many granules and how many little things. Can be twisted twice or through the freezer.

I have a question. And whoever did heather?
With my husband, heather is just drying up. Haven't tried it yet. As soon as we try, I'll report back. It would be necessary to collect more, it is already fading. You can't make heather like tea, it's only as an additive.

Likar Nadiya, Nadya, thanks for the photo. Normal granules, and dust is also useful, it's okay))

Tell me, looks like fireweed? It settled in the yard. Nearby there is a meadow, there is a lot of that, and has already bloomed and fluff.
Tatka1
As for me, it doesn't look like Ivan-tea ... I, of course, am a layman in it, but comparing with the pictures of girls ... If it were not for the flower above, I would have thought mint. I wonder what they will say.
Lasto4ka
So it immediately seemed to me that mint ...
lily_a
There are 4 petals in the Ivan-tea flower. I am not confusing?
And in the photo there is more.
Radushka
but it seems to me that it is balsam. It often becomes a weed
Likar Nadiya
So I'm wondering what it is. It seems to me, small-leaved fireweed. And Ivan is narrow-leaved. And small-leaved, like, is not used as tea? These are the doubts.

Radushka, looked balsam, another plant. Not it.

Radushka
Well, this is small-flowered fireweed. An excellent medicinal plant. BUT ... not Ivan tea. I have to ask Lina - can you make tea from small-flowered fireweed?
Likar Nadiya
Will seek...

Today I tried chokeberry and apple, all mono. All liked it. I was very impressed by the apple tree: the color of expensive black tea, bright with a reddish tint (made from a winter apple tree by Jonathan, red), the taste is very interesting. This is my favorite so far.

Enlighten me, experienced tea-makers. Does the taste of raspberries / currants differ between rolled and through a meat grinder, after freezing, naturally.

I haven't made raspberries with currants through a meat grinder and won't. Because there will be NO granules. there will be just fine dust. And raspberries after a meat grinder (spring) gave me granules. Last year I compared granulated mono-raspberries and cut leaves after rolling. Granular seemed to me with a richer taste. The color is the same. Smell too. Fermented then 6-8-12 hours. I compared everything. This season, I freeze and thaw everything three times (and more), so I ferment for 1.5 to 4 hours. Teas come out more aromatic
Tatka1
Likar Nadiya, I don’t do mono, mixes are only granular. As well as Radushka according to the method of Zechariah.

Radushka, and knead for a very long time? Raspberries with currants. I defrost it and cook it in a meat grinder.
Likar Nadiya
Radushka, Tatka1, thanks for answers. Why am I asking, I made raspberries and mono currants. The leaves wilted, then froze, and then through a meat grinder. The result is granules and dust, approximately 50/50. Raspberries came out a little better, just loose granules. I liked the taste and aroma of both.

Radushka, okay, I'll try tomorrow. It smells like grass. Maybe overdried?
Radushka
Oljuschka, and what was the temperature during drying? I never smelled of raspberries. Absolutely. And I dried currants at 70 in a dryer. The smell was currant in the tea
Elena Kadiewa
Maybe you fermented a little?

Radushka, I do not know. The thermometer was said to be lying, and I did not look. Made the smallest fire.

Radushka, I made tea. The smell is incomprehensible, but there is a currant flavor, if it didn't seem to me. Aunt said no taste. And I liked it.

Lasto4ka,Svetlana, did together. After mincing and drying, it turned out to be very fine (they do not spin into granules). I don't bother about this. Delicious and okay.
Likar Nadiya
I reread the 2014 comments. They write that with prolonged deep fermentation, the tea turns out to be richer. I made all my teas, for testing, not for long, no longer than 8 hours. I like everything so far. Share your experience, did you do more than 20 hours of fermentation? How is the taste, aroma?
Lasto4ka
Likar Nadiya, Nadia, as far as I understood, Ivan likes to ferment for a long time. And the cherry is aged for about 12 hours. And the rest are gardening no more than 6 hours. And then, if we do (freezing-defrosting) according to Zachary, then we reduce the fermentation time to 1.5-3 hours.
Likar Nadiya
Lasto4ka, well, here it seems to me too. I also made my last teas through freezing. And the strongest aroma of the mass appears in about 1, 5-2 hours. So I think that prolonged fermentation can kill the tea, it will sour.

A very correct approach. We brew "dust" in bags. And so it turns out like a small-leaved ...
By the way, I also brew the "dust" from our teas, no worse than granules
Likar Nadiya
In my freezer, sprigs / stalks of mint lie in my freezer, left after re-twisting the leaves. I got them to warm, and the aroma is insanely mint. So I think now, does the twisted mint smell weak to me because there are only leaves and inflorescences? ..
Lasto4ka
Likar Nadiya, Nadya, I did it a couple of times with chopsticks. Untidy tea is obtained, but the effect is the same

prolonged fermentation can kill tea
I ferment garden sauces only for 4-6 hours (I start to dry ... the last portions are 10-12-hour long). Raspberries were fermented for a maximum of 12 hours last year. I did not notice any difference in taste with a shorter fermentation time. But, raspberries are dryish. And the more succulent plants, I think, will turn sour

Svetlana, and my "dust" turns out even tastier! Because I collect in a jar from various teas and aromatic herbs. Smell - Taste - Dumpers

I went for the leaves today, there are a couple of wild pears, apple trees and a plum nearby. I was standing there tearing off a plum, choosing better leaves, bending branches. I raise my eyes in search of a better branch, and they look at me from the top
Fermented tea made from leaves of garden and wild plants (master class)

There will be tea from the wild apple tree. And I wanted a plum ...
Lasto4ka
Likar Nadiya, Nadia, is it an apple tree, or what?
Likar Nadiya
Svetlana, Yes exactly. The fruits were at the very top, I did not immediately see them. By the time the fruits were discovered, I had already managed to collect a full packet of leaves. And at home I also cut off the apple tree. There will be 2 teas from homemade and wild apple trees.

I also decided to try the hawthorn. I reread the notes. It will pass fermentation, which means it loses its medicinal properties. And then there is a hefty tree, leaves from the palm, already itching to cut off the hands))

For tea yesterday I made chokeberry jam. The taste of the natural berry has been preserved, only sweeter.
