girls, maybe I, of course, will ask a stupid question, but still: how does the Village differ from mixes? or are they synonyms?
And it seems to me that mixes are when mono is mixed in different proportions. And rustic - all the leaves are fermented together, such a blend turns out ...

I believe that when we twist several sauces at once in a village, they are mixed with juices before fermentation and the aroma of such tea will be slightly different, better than when mono mixes are mixed. But this is my opinion .... And I prefer to make country tea (I played enough with mono last summer). You can do your own experiment and compare the taste.

So do I. I was interested because I was just starting to make teas. Now I will do mono only those that are not yet familiar. Well, and ... raspberries, of course.
The plans for MONO tea now include forest blackberries. Well, depending on how much you can get, of course. If 800 grams, then there will be cut mono. If less, then mix with an apple tree and granulate.
Podmosvichka
paramed1, Veronica, you are very timely with advice
I drove after apple trees, added to currants.
And we used to live in the neighborhood, I'm from Mitino

Be sure to do a rustic one! This is absolutely, well, straight SOVS, a different taste.
Is this all there is in the garden?
Or is a certain composition needed?

Late, I realized, the leaves are not very everywhere.
Narwhal today blackberries 800 grams.
Do you need to cut the petioles?
Tatka1
Nadyushich, so I liked this option after numerous experiments.

Lasto4ka, I thought so, but at some point I doubted))))

Podmosvichka, I cut off. they are tight, each has its own preferences.
And here is a quote from Lyudmila: "I make tea from strawberry leaves after harvest, when I process the beds. I remove cuttings from all cut leaves, since they are very rough. And I leave cuttings on the leaves of other plants - they do not really interfere. "
paramed1
Podmosvichka, Lena, we often visit Mitino!
And country tea - there is a separate topic for it. Go read it! Very interesting too! In principle, a bunch of everything that comes to hand is loaded there. Who likes what and who grows what.

The plans for MONO-tea now include forest blackberries.
About 30 years ago, when I just started to study teas, apart from Ivanushka I tried to make tea from raspberries, from strawberries, and once I picked up a forest blackberry. But then I made a lot of mistakes, but I remembered well the smell of blackberries during fermentation, the aroma was divine, something looked like a rose, but not intrusive. And after drying it did not smell ... Perhaps he would have returned after storage, but I did not know that then. And I read about blackberry tea somewhere in a magazine. A peasant made such tea and in England treated his friends, not saying that he makes it himself. So this tea was above all praise.
This is what I mean. Make mono, write the result and if everything works out, recipe plz ...
I did it from the forest. And from the garden, another result is possible, I wonder what. Itself far from the forest blackberry and garden, I have no opportunity to type, and the result is interesting.
Radushka
Hope, I have no pure garden blackberries. There are two hybrids.Cumberland's spiny jerky and not Loganberry spiny blackberries (at least that's what they called it to me at the time of sale). I did both in mono last season. She cut it, because, you yourself understand, they, most likely, will not become granulated. They are nothing special. Raspberries are much better. But ... she didn't throw it away. Mixed with chopped mono-raspberries and named blended tea "Three Sisters". I will decorate with flowers that I can buy. Well, there will be beautiful tea. Anyway, I will make a blackberry. If you don't like mono, I'll add it to the three sisters!

It is already good that there is a result for hybrids. Wish you good luck with the forest blackberry!

Well, I don’t know, I cut the petioles from pears, they’re too rough, and sticks in tea turn out
Radushka
And I remove the stalks from all over. And at the apple tree, even the central veins HINDER me!
Podmosvichka
Cut off all the cuttings
Pears gathered quite a bit. And here's the question immediately - should the leaves be perfectly clean?
I wanted to pour the apples into the currants, but did not. I want to try pure currant.
I'll dry the apple and pear together, right now I'll go for raspberries, add a little.
Runoff of villages and bushes, but there is practically nothing to collect, all the leaves are sick
And all this rainy leap summer is to blame.
Okay, I'll do a little for testing, if you like it, next year, if everything goes well, I'll start harvesting right from spring
Elena Kadiewa
Podmosvichka, one currant will crumble if in a meat grinder. Read Radushkin's recipe.
Tatka1
Lasto4ka, I delete everywhere))) these are the mistresses of the topic Lyudmila quote).

Podmosvichka, and I have already eaten most of the leaves. They all hang in a hole (((
Lutik
Tatka1, For two days, offended, did not go to her tea, hung on the street. And now I think I'll take it, it seems like it is going to rain. I brewed it before throwing it away, you know nothing, I leave it for dry fermentation!
Tatka1
Ninok, expensive! Take offense at him for at least another month, then brew it again)))

How I envy: the rain is going. And we have +39, I'm dying

It is better to let the tea brew for about a month for the so-called dry fermentation. If you try to brew tea right after brewing, it may not impress you. The longer the tea is stored, the tastier and more aromatic it becomes.
So wait Ninochka!!!

Podmosvichka
elena kadiewa, Lena, I've already read
I will not use a meat grinder, my husband said that he would not twist raspberries and currants anymore
I didn’t really want to, I don’t want to drink salty tea (he played it all over, he was drunk all over)
I'll roll it up and cut it. I've already put it in the freezer. I will complete it in the city, in email. oven.

Girls, how do you feel about the hypothesis of reincarnation? Don't you think we were all TRACKS once?

Radushka, Or locusts!
Tatka1
Radushka, Lutik, we don't eat the leaves, but turn them into tea. So we-sorceresses fairies from "Cinderella"

Girls, but I bought myself an electric meat grinder. Today I made a mono pear. So this is a qualitatively new level! I can't achieve such beautiful granules on my hand!

Added on Friday, Jul 29, 2016 10:35 PM

And further. I remind you. Cut into tea drying! Apples, dried cherries - with a bang! My friends first of all catch fruit from tea and eat it. I will also try apricot and pear.

Setlan, congratulations on your new assistant, let him please and work properly.

Girls, I want to show for comparison the leaves of the narrow-leaved sucker.

Here leaves with twigs, but clean leaves after withering turned out to be 3700g

Tatka1
francevna, we, like Ivan-tea, do not have a sucker either. Everyone envies that we live in the south, the sea is nearby, watermelons, tomatoes. But you can't make tea from them. To whom, of course)))
So many ... Mix or rustic?
Natalo4-ka
Tatka1, Tatyanahow do you not? There is in Azov, in Odessa, but you don't?
francevna, Allochkaare they both good for tea?
And in a neighboring village I found a young tree, if not in this one, then next year I will definitely try
francevna
Tatka1, Tatyana, type in the search engine "narrow-leaved goof" can show where it grows.
This is how I found the growth of Ivan-tea in the Rostov region, only I can't get there.
I changed one package of frozen leaves for cherry leaves, maybe another one can be exchanged.
I add a little to the mixes, I'll probably do the rest in mono, so that I can add it to teas at will.

Tatka1
I started making tea, I asked all my friends who lived in the suburbs, they say no. Maybe somewhere far away in the villages, but alas ... I have no one there. I live in the private sector, there are some fruit trees, and raspberries, strawberries, currants. Girlfriends have the same thing. Come on, I only regret one thing - about Ivanushka. And so many different other seagulls have made and do a little bit. And enough for myself, and for my girls.

francevna, Allochka, as I saw your photos, I immediately went to google)))
So! Is it a bush such as a silvery type of olive and small on it?
francevna
Natalo4-ka, in 2014, she collected the leaves of a sucker, whose leaves are wider, but there were no such huge ones. These are young shoots, there was a lot of precipitation, that's why it grew like this, and on the tree itself it is much narrower.
But we saw very narrow ones at the end of the collection, the trees are much higher, everything is narrow, even young shoots and the leaf is darker.
At first I thought it was a male tree, but then I found fruits on it and they do not differ in shape. I tasted the leaves, I did not notice the difference, there is a slight bitterness.
Tatka1
I can not throw pictures from Google, I write from the tablet, the computer is not yet available
francevna
Tatka1, Tatyana, we have a bush and trees.
In my photo you can see, slightly pubescent olives.
Tatka1
Allochka, we have something similar near the river. so I'm not mistaken. if anything, I drive it off in the evening.
I wish I had such a program on my phone: I pointed the camera at the plant, and it gave you the name)))), unfortunately, I don't really understand all this. It would be more correct to say that I don't understand at all ((
I can sell cars, I understand them (10 years in a car dealership) and plants ... it was you who hooked me into this business

But, we can, in Kherson and not ...
Natalo4-ka
Svetik, you have not been, but the coast and the sea Black Sea-Azov and the river are all mine

Lutik, Ninok! You there, let's break away from the seams and run after the sucker) you will mix with the turner))))
Radushka
I made a sucker with cherries. Fine. Do
Tatka1
Radushka, so what do you think, maybe separately with a thorn, separately with a cherry, or whatever you can eat? (and there are thorns, cherries, pears, apples).
Radushka
Tatyana, I would mix everything together IMMEDIATELY! Well, I just don't know the turn ... I haven't done it yet

Added Saturday 30 Jul 2016 1:30 PM

There is a bag in the freezer. I collected some leaves ... wilted, weighed them and put them in a bag. There is a sticker on the bag for notes. With a simple pencil I write on it what and how much is already there. As it is recruited for a batch (not less than 1 kg, not more than 1.4), I do so.
Tatka1
Radushka, I hope I didn't bother you) Should I wash the leaves after that "harmless chemistry" or not?
Lutik
Tatka1, Tanyusha twists lifted, of course I will marry a thorn with something, we have everything in abundance, the freezer is stuffed with leaves, apple cherry, pears, thorns. My arms and legs are too late! The rain has changed its mind, so again twists!
Tatka1
Lutik, hold on, mistress! in winter, my family will thank!) I get up early, I've already redone all the garbage. Bread, leaves and ironing are left!)))
Did you goof?
Lutik
Tatka1, Yes, Tanyusha, did it in the spring during flowering-mono, then added tea rose petals and some meadowsweet flowers! This is something rich in aroma and taste! My husband and I really like it! I repeat next year, the atoms are unlikely to remain the next year, the kids will come and pick up!

Tatyana, I am very glad that the photos came in handy and now you will be with new tea.
Lutik
Tatka1, Tanyusha I still have the very first tea that I chewed with a manual meat grinder, there are no granules at all, but the tea otpad has a flower-caramel smell, Quince, wild pear, rosehip leaves, red mountain ash, golden currant, apple-quince more than anyone else, This is me too going to repeat!
Tatka1
Girls, expensive! Share your experience and photos more often) The topic is large, I read everything, but that was theory, now in practice your advice, observations, and preferences are very helpful. Just like today ... bang!) And I will have tea from a sucker! and I keep whining: no, no!)))
I once missed about the cherry, that I needed a little of it in the mixes, and she interrupted me everything. Well Radushka said on time and the next one turned out to be completely different.
So each of your reports for me is a grain for reflection and study!)
Understanding more or less recently came how and what, now it would be more meaningful to re-read, but 900 pages ... So, if anyone repeats, personally I will only be glad!)))
