If the dough several times in heat and cold, it will definitely deform.

We take the whole piece of dough, it heats up a little at room temperature - about half an hour so that you can work with it, break off the desired piece for rolling, knead, roll, cut ..., break off the next one, mix it with the scraps, work on. If the temperature in the room is high, we put a large piece back in the refrigerator, it has not yet overheated.We mix the next portion of scraps with a new piece from the refrigerator (I tear off a piece right in the refrigerator.) During the time we are working this large piece will still not have time to cool down to an oak state.
And if I mix the scraps (which are already overheated from the warmth of my hands and rolling) with the dough at room temperature, it becomes oily and becomes rubbery already during rolling, you roll it, and it shrinks and then the baked figures shrink and bulge.
When rolling, if we see that the dough is oily, sprinkle it with a little flour. It should be matte.
This, in principle, is suitable for any dough with butter - it does not like overheating.
That is, you need to maintain a balance of temperature in the dough.
And if I do not use all the dough at a time, I put a piece of scraps in the refrigerator and in the future the difference is very visible - this piece is denser and more capricious. Therefore, next time I definitely mix it with the dough that I did not touch.
The baking itself. To speed up the process, I make several blanks at once: I roll them out on pieces of baking paper to the size of the baking sheet (I cut corners off the paper - just like on a baking sheet so that the paper lies evenly - I use them several times later), put them on baking sheets and put them in the refrigerator. How much will fit in the refrigerator. Then I bake three baking sheets at once on convection. Sometimes I have to turn one baking sheet - because I have one fan in the oven and hot air moves along the same path all the time. But it is still better than one oven at a time without convection.

On the one hand, the surface is flat, narrow, like a knife, on the other, it scrapes everything from the bottom and walls and then there are no unmixed streaks and less bubbles in the color icing.
