Dough for Samsa, Napoleon, Pizza

Ingredients

Mrgarin 300 g
Flour 4 cups (250 ml)
1 egg + 1 teaspoon vinegar + water 1 glass

Cooking method

  • Grate margarine, add flour and liquid components - water, egg and vinegar (everything should fit in 1 cup (250 ml). Knead the dough. Divide into 4 parts, roll into balls and refrigerate for 2 hours.
  • To prepare Samsa - roll out the dough 5 mm thick, cut into squares with a side length of approx. 7 cm and sculpt triangular pies with meat (grease the top with a beaten egg).
  • To prepare Napoleon's cakes - roll out the dough approx. 3 mm. For Pizza - approx. 1 cm.
  • We bake at a temperature of 180 - 200 * until the products are browned.
  • This dough also makes Pizza with a closed top dough (similar to Ossetian pies). We put the dough cake in the form so that the sides are created. Lubricate with ketchup, lay out the filling and cover with another flat cake on top. We pinch both cakes along the top of the sides and make a small hole in the center of the top cakes with your finger - to evaporate excess liquid from the filling during baking.

The recipe for this dough was brought from Central Asia more than 30 years ago. Since then, this is the most favorite dough for the products listed above, not only mine, but also of a wide circle of my friends. It also works great with VES electric muffins.

I want to add a little. I mix this dough and send it to the freezer. Lies for several months. If necessary, cut off a piece and use. A snack cake is very good from this dough. I have a lump of this dough in my freezer all the time. As I use it, I mix a new batch. The dough can be rolled out very thinly.

Therefore, it is better suited for lean fillings, with cabbage, for example, or potatoes. But samsa, especially with lamb - tin is obtained with "creamy" dough. Very bold! But horror, how delicious!
