I have never baked such a large bird, I can only suggest general recommendations - be sure to pickle the carcass before cooking. I cook like this - in milk, this time I had a store one, I added a jar of Activia, stirred it well and put nothing on the Defrosting program without heating anything. I decided to try this option, but there was no milk of such a fat content in stores, I took the fattest of what was, 6%, and fermented it with sour cream. As a result, there was still sour cream in the jars on top, not very greasy, but below, about 2/3 of the can, something more like homemade sour milk that my mother cooked before, or, if I may say so, yogurt with sour cream taste. In principle, not bad, you can fill salads with this product, there will be a less high-calorie dressing, but you cannot call it sour cream in the full sense of the word.
In general, I conclude that if you have the patience to run every 25 minutes and extend the program, then in our Saturn you can get a good homemade sour cream from the cream.
