The other day we decided to try to smoke sausages in an ordinary tin smokehouse.
It turned out amazing!
Here is the prescription.
Chicken meat with skin from the whole chicken - about 1.2 kg (video on how to roll a broiler chicken in 4 minutes - here

Tilsiter cheese - 0.3 kg. (everything that was in the refrigerator)
Chicken egg - 2 pcs. (1 category) about 120 gr.,
Basil, dill, parsley - 200 gr.,
Sea salt, you can use the usual coarse grinding - 30 gr.,
Cream 10% - about 140 ml.,
Pork casings - 2 meters,
Pass the chicken meat on a large wire rack, cut the cheese into 7-8 mm cubes, cut the greens not finely.

Mix everything for 3-5 minutes - until the minced meat thickens.

Blanch for 20 minutes at 80 degrees. Celsius.

Upon arrival, we quickly light up the brazier, pour wet alder chips on the bottom of the smokehouse, put the grate and lay out the sausages (see photo)

After the appearance of thick white smoke from the smokehouse, wait 10-15 minutes - and you're done.

Antonovka, it happens if the knife in the meat grinder is dull, and there is a film in the meat - it just winds up on the screw and pushes everything back. Poke a knife - and everything will be OK! Once I forgot to put it on at all - my husband came to twist the meat - and IT WILL CLIMB BACK - let's disassemble the meat grinder - and then I remembered that the knife was on the table! He still remembers me! In general, it turned out, as in the joke - if you really want cutlets, but you don't have a meat grinder, try to push the meat through a colander!

I have a special propeller-type lattice that is put on the auger and it does not hang out - I can't take a picture, the fotik went to the trash can. But in the old electric and even older mechanical this gadget was not (I myself saw this for the first time - I now have a "Zelmer") and nothing was screwed

Antonovka, I think that your meat grinder auger will not break. The angular load when pushing the minced meat is minimal - it is no longer meat, but liquid minced meat, so there will be no beating. Over the past year, I have not had any problems yet, and I use the meat grinder more often as a sausage syringe.

I'm already thinking about buying a syringe - a meat grinder grinds the minced meat and the fat is dispersed, the minced meat is whiter and structural inclusions (butter, cheese, vegetables and fruits) are grinded too.

In general, in Ukraine, meat and bacon for sausage are not turned into a meat grinder, but cut with a knife into small cubes, but I'm not ready for such feats - I had a regular meat grinder mesh with 3 large holes, it fit the diameter of the old electro "Hermes", and the "Zelmer" had a larger diameter - I gave my husband a sample and its craftsmen made the same for me on the machine. Still need a card reader - show you ...

As far as I understand, this meat grinder does not have a second support for the auger. When stuffing sausages, we use only the auger and tarsus. pressing it with a ring.
There is also a kebbe attachment - but it's something like cutlets.
