Ingredients

Minced beef and pork. 1 kg
Onion 4 heads
garlic 10 teeth
Ground coriander seeds 1 tbsp. l
Blue fenugreek (utskho suneli) 1h l.
Imeretian saffron 1 tsp
Dried Basil 1 tsp
Dried savory (kondari) 1 tsp
Dried barberry grains 2 tbsp. l
Wine vinegar 9% 2 tbsp. l.
Ground black pepper taste
Hot red pepper taste
Salt taste
Pork belly

Cooking method

  • Take about 700 grams of fatty beef and 300 grams of lean pork. Pass the meat through a large wire rack (I have 8 holes) or chop finely. Finely chop the onion (I chopped it in a chopper) Add the onion, crushed garlic and all the other ingredients to the minced meat. Mix everything well. Send the minced meat to the refrigerator for two hours. Fill the minced meat into the pork belly through the nozzle. I have a sausage syringe. Make small sausages. Tie the ends with twine. If desired, you can tie a horseshoe. Fry the kupaty in hot sunflower oil. Better in an oven preheated to 200g. When browned on one side, gently turn over. I fried in a deep saucepan with a thick bottom, because the oven was covered with a copper basin.
