I used a bakery set from "Khlebburg", on the box of which the Redmond bread maker is advertised, on which this recipe was tested. The box contained 500 g of Scandinavian rye-wheat bread mix and a 2 teaspoon bag of dry yeast. Instructions on the box: install a dark crust; maximum weight (for Redmond it is 1 kg); use 320 ml of water; 1.5 teaspoons of yeast (for some reason shifted 0.5 teaspoons); bake with the Fast program (do not use the Ultra Fast). I installed all this on the freshly purchased Bina, launched the program.
In the attached book, I looked at the recipe for simple white bread, calculated the weight of the ingredients for 900 g. It is not clear that the total weight of raw products is less than 900 grams, especially since the finished bread will not carry 900 grams.
In short, the stove kneaded my set, switched to Rost1 for 20 minutes, it seems, squeaked before the second batch. The dough did not rise properly, did not fill the form, perhaps there was not enough time for the rise, and the oven began to bake. At the end of the program, what you see in the pictures turned out. At the bottom, a plump dry crust turned out, and at the top it was normal with a large difference in thickness. The crumb is damp and dense. It tastes nothing, you can eat. Probably it was necessary to bake on the main program. I will continue to study the subtleties.
