Pork - 1 kg (I take balyk)
Garlic 6-7 cloves
Seasonings for meat, black pepper (to taste)
Bay leaf 1-2 pcs. (grind)
Liquid smoke - 2 tbsp. spoons. (optional)

Cooking the brine:
1 liter of water, 1 teaspoon of sugar, 1 tbsp. a spoonful of salt.

Grate the meat with a mixture of garlic, spices, pepper, chopped bay leaf and pour over with brine.
Put in the refrigerator for 10 - 12 hours.

Before cooking, remove from the brine, put in a roasting sleeve, add liquid smoke and distribute it evenly over the meat. Tie the bag from the sleeve tightly with threads (as if to compress the meat a little). Steam for 1 hour 20 minutes.
