Ingredients

pumpkin puree * 1 cup
flour 200 g
eggs 4 things.
milk 700 ml
powdered sugar 2 tbsp. l.
butter 75 g
orange zest from 1 pc.
nutmeg, cinnamon, ginger by a pinch
*a cup 250 ml

Cooking method

  • All my family and friends love these pancakes, bright and fragrant, I hope you will like them too).
  • - Prepare the pumpkin puree: cut the pumpkin in half, take out the seeds with a spoon, peel the pumpkin from the peel, cut into large pieces, fold in a heat-resistant form or put on a baking sheet on baking paper (so that the baked pieces do not stick) and bake at 185 C for 45 minutes or until will not become very soft. Cool and grind with a hand blender.
  • - Sift the flour into a large bowl and mix with the powdered sugar. Make a depression in the center and break the eggs there. Add pumpkin puree to the eggs and mix well.
  • - Add a little milk and stir gently. Stir in flour gradually from rim to center and whisk lightly (with a whisk), adding enough milk to make the dough like half whipped cream. Add butter and remaining milk. Whisk still a little.
  • - Leave the beaten dough for half an hour or an hour, and then bake in a pan, lightly brushing the bottom with a brush dipped in vegetable oil. Pour a thin layer of dough and fry until the sides are light brown. Then turn over and fry for a minute on the other side. Take off. Stack the finished pancakes. Oil can be omitted.
  • Serve warm with jam, sour cream or berries. Delicious with Nutella chocolate nut spread.

I baked wonderful pancakes again today
The pumpkin was big, so I made a double portion. Slightly changed the recipe, it turned out pumpkin-pumpkin!
So I took
500 g (and to be honest, all 600 g were) pumpkin,
6 eggs (8 seemed a bit too much for me)
5 tbsp. l. cane sugar
300 gr. flour
100 g butter
a pinch of vanilla sugar, nutmeg, cinnamon
1 tsp soda
I did not measure milk, I added so much that the dough became a regular pancake in consistency.
There was very little time, so I thoroughly beat the baked pumpkin, eggs, sugar and butter in a cube, added flour, soda, beat at low speed, then added milk right in the process of beating.
