Ingredients

For dough:
Wheat flour 500 g
Warm water 2 glasses
Fresh yeast
(or 3.25-3.5 tsp dry yeast)
40 g
For the test:
Wheat flour 500 g
Warm milk 4 glasses
(1 l)
Salt 1.5 tsp.
Sugar 1 tbsp. l.
Egg 2 pcs.
Butter
or margarine
(can be replaced with vegetable)
4 tbsp. l.
(60 g)

Cooking method

  • Glass = 250 ml
  • Dissolve yeast in warm water, mix with 500 gr. flour, cover the dishes with a towel and put in a warm place for 1 hour.
  • "Precipitate" the approaching dough, add melted butter, two yolks, ground with salt and sugar, pour in the remaining flour in a thin stream, pour in the warmed milk in two steps. Mix the dough well so that there are no lumps. Put in a warm place until the volume increases by two to two and a half times. As soon as the dough comes up, "sediment" again, return it to a warm place for a further approach, only make 2-3 kneading. After 3 kneading, add whipped whites into a strong foam, gently stir the dough with a spatula from the bottom up and let the dough come up again. After the dough has come up, without stirring, we begin to bake the pancakes.
