Pancakes with whey (kneading in reverse)

Ingredients

Milk whey 500 ml
Wheat flour 250 gr.
Chicken eggs 2 pcs.
Sugar 1-2 tbsp. l.
Salt 0.5 tsp
Boiling water 250 ml
Soda 0.5 tsp
Half-sun oil 1-2 tbsp. l.

Cooking method

  • Usually, when kneading pancake dough, we mix the liquid ingredients and then add flour. The opposite is true.
  • Beat eggs with sugar and salt.
  • Add flour, gradually stir in eggs. It turns out to be a rather tight mass.
  • Pour warm (40-45 * C) whey to the egg-flour mixture, beat thoroughly, preferably with a mixer, breaking all the lumps.
  • If any lumps remain, the mixture can be filtered. In 3-5 minutes, everything was perfectly mixed with an ordinary hand mixer.
  • Pour soda into boiling water and as soon as the violent reaction stops, pour boiling water into the dough with a stream, stirring constantly.
  • Leave the dough to rest for 10 minutes.
  • Then add vegetable oil, mix well and bake the pancakes in a well-heated frying pan or, like me, on the Brand 351 electric crepe maker.

I made a double portion at once, having doubled all the ingredients, except for boiling water, I left 250 ml.
It turned out 22 pancakes with a diameter of 30 cm.

An, look how I reasoned. I needed to get a bigger pancake yield. Therefore, I increased all the ingredients. I had 0.9 liters of serum. When I bake pancakes on kefir (1 liter), I take 0.5 liters of milk for making flour. But whey is not kefir. And I decided, having introduced it into the dough, first take 250 ml of water. And to look. And the dough turned out to be somewhat watery. But after 10 minutes of rest it became as it should. And the pancake maker stretched well and pancakes of the required thickness turned out. And I didn't add more water. That is, you look at the consistency, to which dough you are used to, and dilute it to such a state.
