I bake this bread all the time, almost every day! Slightly changed the amount of salt - 1.5 tsp and sugar - 1.5 ml. It goes well with soup and jam for tea. Isn't anyone else interested? Highly recommend!

Yesterday I baked wheat-rye bread with seeds. It turned out to be very airy, soft and tasty:

Loaf size 1 kg

Water 280 ml
Milk 100 ml
Vegetable oil (put sesame oil) 1.5 tbsp. spoons
Wheat flour 500 gr
Rye flour 100 gr
Salt 1 tsp
Sugar 1 tbsp. the spoon
Dry yeast - 1.5 tsp
Pumpkin seeds - 3 tsp
Sunflower seeds - 3 tsp
Poppy seeds - 3 tsp
Lightly roasted sesame seeds - 3 tsp

Put all ingredients in HP except seeds
Put the seeds after the sound signal (I laid it down 5 minutes before the end of the kneading, the seeds were intervened by hand, taking the bun out of the bucket, the cover was covered).
Baking mode - Whole grain bread.

I did not photograph in the cut, but it is cut well, does not crumble, the pulp is uniform. The number of seeds can be adjusted to your liking. According to this recipe, I baked the first bread without pumpkin seeds, and put 2 tsp of poppy seeds and sesame seeds. The same was not very bad.

I baked according to your recipe, although I made minor changes in accordance with the contents of the refrigerator: I replaced the water with 130 ml of pumpkin broth + 200 ml of old milk whey = the total amount of liquid was 330 ml; oil added vegetable (corn) 1.5 tbsp. L., also added anifarin tsp, Viennese spices - 0.5 tsp. (a little, not felt in the dough), salt-1.5 h. l. and seeds - 4 tbsp. l. (into the dispenser). Flour, yeast and sugar - no change. Basic baking, raisin baked goods, size L, light crust.
The result was a tall, fried bread with a high, but somewhat oblique top (probably, you need to add another 10 ml of liquid, but the bun was beautiful), it tasted sweet, you can see the sweetness added pumpkin broth, but the salt is still not enough, you can 2 h. l. The bread crumb is very airy and not very well cut (at the bottom of the batter it sticks to the knife). But these are trifles! The bread is great !!!

I also changed the recipe in different ways: instead of water, I used 250 ml of whey and 100 ml of strong chicken broth with spices and even with pepper, warmed it up. Instead of rye flour - buckwheat ground on a coffee grinder (as they say, a recycling program). Instead of butter or margarine - grilled fat from boiled pork. Salt also took 1.5 tsp: I like bread saltier. She did not regret the seeds, she sprinkled them with a spoon "as it takes". Well, not bread - a miracle!
