Emulsion for cooked sausages in appearance / consistency is such a viscous, homogeneous mass, slightly rubbery to the touch. Achieved either with blender / cutter knives or by rubbing pieces of meat with stirring.

I don't really like knives. Because there are two ambushes.

Now in numbers.
The total mass of meat is taken:
- 2% salt (i.e. for 1kg. 20g. Salt)
- 20-25% liquid (i.e. for 1kg. 200-250ml.)
- spices to taste 1-2% (i.e. 10-20g per 1 kg), classic set - allspice, cordamom, nutmeg. I put in 1/2 tsp. for 1 kg. these three components. Garlic and stuff for everybody. Even cinnamon is an interesting sausage spice.

The liquid can be water, milk, cream. Then you get milk sausage, creamy sausages, etc.

I experimented in different ways. I froze all the liquid, part of the liquid, into ice. And so on. Changed the percentage.

Now I'm experimenting with the amount of liquid. It seems to me that grinding with a knife and a nozzle in a bowl requires a different amount. Since we knead with a nozzle, and the knives are cut smaller. It seems to me that you need a little more - closer to 30% (i.e. 300ml per 1kg.)

Here is what is in the photo - 620g. fatty meat + 150ml. milk 1.5% frozen in ice + 100ml. cold cream.

I held the attachment and the bowl in the refrigerator for an hour.
Minced meat in the freezer, but not to freeze, but to freeze.
The milk froze in the glass.
Cold cream
12gr. salt, and 1/2 tsp. allspice, cordamom, nutmeg, 1 tsp. Sahara. Since sugar is also a preservative for color.

The main rule is that the meat should not be higher than 10-12 degrees, and it is best to keep it at the level of 0-5 degrees.

1. Put the minced meat in the bowl, everything is so cold
2. I poured salt + spices
3. Turned on to speed 2 to stir the spices.
4. I poured some cream when I saw what was absorbed, added more, and then more until I poured everything. This is about 1-2 minutes.
5. Set the speed to 4 or slightly more. Previously, I did not raise the speed, so as not to splash the cream, but as it was absorbed, it raised it.
6. It kneads there, and I stab ice in a glass with a knife. As I break off a piece, I crumble it and throw it into the bowl. But I try to stretch the ice for the whole process. The ice cools the meat by keeping the temperature low.
7. Well, that's it, the timer showed that the machine worked for 17 minutes.

Visually, first the standard minced meat, individual pieces are visible, then gradually turns into a mass. When the cream is added, it seems that it is liquid, but the mass is kneaded and thickened.

I'll show you the result tomorrow.
But this is an experiment in the amount of liquid. As for the emulsion of the three experiments, I liked this one most of all, and for the taste - the verdict tomorrow.

I have such an abnormal family that if you cook something from desserts, please repeat it for a couple of weeks. Five times I cooked an apple pie (there are recipes), now there is a turn of profiteroles / custards, I have also done it 3-4 times.

So, I want to say - it's a pleasure to do them with induction!

1. Water + butter + sugar + salt in a 110-120g bowl. speed (3)
2. After 3 + - min. the oil melted, the water began to try to boil, stopped, the flour boiled, put on the nozzle, speed 1 or 2, turned off the heating.
3. It kneads there, and I wait for it to cool down to 60 degrees.
4. I throw one egg at a time and watch.
5. I stop everything, in a pastry bag, put it in the oven.

The timer shows the total operating time of the machine at all stages - 11-12 minutes, some of which I just wait until it cools down.

This is the fastest and easiest dessert to prepare!

Still cream, but I make it while everything is in the oven. Custard is rare, because it will be too greasy, in the sense that you need to lose weight. More often, light different fillings, or not sweet, so that half are sweet, half are not sweet.

The first times I also did flexi with stirring.
As advised in the recipes, but then modernized it for myself.

Until the butter melted, it sticks to the flexi, and it was necessary to scrape it off with a spatula, that is, there was always a piece or two that did not dissolve in the water, since it stuck to the flexi above the water level at the very beginning, and the rest of the oil already dissolved.

And then you add flour, and the flexi is wet from steam, flour sticks to it along the entire length and above, but the working length is only up to half. That is, 1-2 Art. l. flour from the measured by the cash register or again clean off with a spatula.

But if you heat the oil in water without a nozzle (without stirring with a nozzle, I always set the heating to (3)), it will dissolve there and without stirring. Then stop, pour the flour all at once, then put on the nozzle and quickly turn on the stirring, then the nozzle is clean (the upper part), and not covered with flour, and you do not need to clean anything, and it is perfectly mixed and brewed.
