Adjika from Makhachkala

Ingredients

Bulgarian pepper net weight 1.5 - 2 kg
Bitter pepper 1-2-3 ... pcs.
Garlic 150 g
Parsley large bundle
Salt, sugar, vinegar 9% 50 g each for a start, then to taste
Sunflower oil 150 ml
Boiled Tomatoes / Tomato Paste 200 g

Cooking method

  • Scroll pepper, garlic, parsley together in a meat grinder, add salt, sugar, oil. Cook over medium heat. As it boils, pour in the vinegar, simmer for another 15 minutes over low heat. Add tomato paste, simmer for another 3-5 minutes, taste, adjust taste with additional salt / sugar / vinegar, roll up.

Recipe from SAY7 forums, thanks to author alena-solena from Tyumen. I only slightly changed the amount of oil.
I liked it for its simplicity and cleanliness, especially since I peeled the garlic and twisted the mush in a meat grinder!
