Dry for half a kilo of flour and 330 water (+20 plant.butter) I take about half a spoon from a bread machine, weighed - 1 gram. Well, I don't heat the dough, of course. While it is lying (in general, it takes about 12 hours between mixing the ingredients and the end of baking) - I fold it several times.

When the dough is weakly kneaded, in the process of these folding it is clearly visible how it becomes smoother and more elastic each time, it begins to squeak under the fingers. When baking in a slow cooker, it holds the dome well, because gluten reaches its maximum development by the beginning of baking.

But when the dough is well kneaded, then it rushes into battle right now - here it is so smooth, here I folded it for the first time and it is elastic, so I continue to fold it and it starts to break under my fingers - the peak of gluten elasticity has passed. But its smell and taste are not enough for me, and even the yeast has not yet multiplied there properly. As a result, my bread became heavier. Or normal, but then I bake it ahead of time and its taste-aroma is simpler, looks like bread from HP, and the crumb is too white and fine-pored ... In short, everything is not so.

From this it is concluded that I need to knead a smooth dough in a quick dough, such as pies / rolls / buns. Well, put more yeast there, and add sugar ...
