Curd and plum pie

Ingredients

dough
flour 200 g
starch 80 g
oil 170 g
sugar 3 tbsp. l
salt pinch
water 5-6 st. l
filling
cottage cheese (soft) 400 g
sweetened condensed milk 3/4 cans
eggs 2 pcs
vanilla extract 1.5 tsp
plum mousse
plum 250-300 gr
sugar 2-3 st. l

Cooking method

  • Sift flour and starch, add salt, sugar, and chopped chunks of cold butter. Blend until crumbled in a blender. Add water and knead the dough. Refrigerate for at least 20 minutes.
  • Put the chilled dough into a mold, make sides. Chop with a fork and bake until golden brown for 25 - 30 minutes at 220 degrees.
  • For the plum mousse, cut the plums into slices, place in a saucepan, add sugar and cook for 2 to 3 minutes until the plums are tender. Transfer to a blender and beat until smooth.
  • For the curd filling, beat the cottage cheese for 2 - 3 minutes, without stopping beating, add one tablespoon of condensed milk, then add eggs and vanilla extract.
  • Pour the curd mass onto the finished cake, put plum mousse on top with a teaspoon and make stains with a toothpick.

  • Bake at 160 degrees for 30-40 minutes, until the mixture hardens and browns.
  • It turns out a wonderful pie with delicate shortcrust pastry and delicious filling.
