Plum Sprinkle Pie

Ingredients

Wheat flour (I have 1c) 400g.
Pressed yeast 11d.
Butter 75g.
Milk 200g.
Sugar 75g.
Salt 1 \ 2h. l.
Filling:
Plums are not large 12pcs.
Sprinkling:
Wheat flour 50g.
Chilled butter 50g.
Sugar 50g.
Vanillin 1 \ 4h. l.
Lubrication:
Natural yogurt (kefir, milk)

Cooking method

  • Grind yeast with sugar.
  • Heat butter and milk to 37C. Add yeast, flour, salt. Knead the dough in the food processor for 7 minutes or in the HP Dough mode.
  • Shape the dough into a ball and leave in a warm place for 1 hour.
  • Then knead the dough, divide into 12 pieces of 60g each. Form a ball out of each. Place in a greased container. I have d24cm, but this is not enough. Optimally 26-28cm. Cover with a towel and leave in a warm place for 30-40 minutes.
  • Not completely cut the plum crosswise. Remove the bone.
  • Then, in the center of each ball, make a depression, insert a drain:

  • Brush the pie with yogurt.
  • Prepare sprinkles. Grind with a blender (or grind with your hands) all the ingredients into crumbs. Sprinkle the pie with sprinkles, pouring the plums inside.
  • Bake in an oven preheated to 220C until golden brown. The exact time depends on your oven. I have 45 minutes.

Did it exactly according to the recipe, not without the "but", of course. There was no raw yeast, instead of them I put 7g of dry yeast, of which 5 - kaf-moment for baking, 2 - usual kaf-moment. Instead of plums, I used ternsliv (blackthorn, as they say in the Kuban) and sprinkled it in the middle with a small pinch of large brown sugar. Yes, I added 30 flour to the dressing for 2 grams.
The chosen shape seemed a little too big for the cake, it turned out more like cheesecakes, but I think all of the above did not affect the taste.
I also baked at 170 degrees for 1 hour, as recommended in my oven for yeast pies. Baked evenly, the crust is thin.
