IMHO, something is wrong with the freezer, since the mass should thicken noticeably quickly enough. Of course, I don't have a freezer, just an ice cream maker, so it can't completely freeze there, but it thickens for sure and you can see it. Further, I am simply afraid to twirl in the ice cream maker, since the blade is still plastic, it may break.

No, my Italian ice cream keeps the cold very well, sometimes even for the second portion of the bookmark it can be enough, if I twist the first portion for a short time. It starts gurgling only when under hot water after using mine.
