In terms of temperature, they are all regulated from 30 grams. by the way in the program. fermentation costs 35g. for the test, this is a lot, I put 30 and it holds perfectly, tested it in all modes, holds + - 5-10 grams for all. on some it definitely holds.
And 230 gr. with 2 tenas, it went up to 260g, which is just fine.
The fact is that these wavy pictograms are described in the passport as a grill.

Round the dough, cover and leave in a warm place for 40-50 minutes. Then divide the dough into parts - I divided it into 12 parts. Round each piece of dough. To do this, collect the edges of the dough to the center on one side, on the other, a smooth surface is obtained, and then pinch the seam. It is difficult to do all this, since the dough is very dense, you can apply an effort with your palm. You should get thick cakes. Cover and leave alone for 20 - 30 minutes.
Form each cake into a donut: poke a hole in the middle with your finger and knead the dough in a circle to the desired size.
Cover the prepared bagels and leave alone until they double in volume, this can take up to 2 hours.
Boil water in a saucepan. Scalded bagels that came up literally for 5 - 10 seconds. I scalded on one side. It is necessary, probably, from two sides, but it is scary to turn them over.
