Apple-cranberry pastila. Polish cranberry (cranberry). It was 300g already pureed. For every 1 kg of applesauce, 100g of cranberry puree. Sugar added 70g for every 1 kg of applesauce. I didn't punch the puree with a blender, just rubbed it through a sieve. According to my observations, if the apples are very juicy and the juice is drained and mashed in a sieve, strained, but if you break through with a blender, then the mass becomes thinner and worse beats. Perhaps this was due to the fact that I had raspberry, apricot marmalade in my previous pastilles, and not some kind of fruit puree in the filler. The mass beat very well, increased in volume perfectly at medium mixer speeds. High revs were unnecessary. There was even a lot left for the fourth cake. I made 4 cakes. I put all 4 trays in one dryer, it took a little longer to dry. I took out the dried layer, rearranged the pallets, so that everything would dry better. In total, the last layer was ready in 16.5 hours. The rest were ready earlier, in about 14-15 hours.
Very good marshmallow turned out. with a light cranberry flavor. With a slight sourness and very bread. It will mature even better overnight. Two cakes turned out with a pronounced cranberry color. It seems that the cranberry puree has "surfaced". Why so, I do not know. This did not affect the taste in any way.
