I made with raspberry marmalade. I didn't weigh the marmalade, somehow everything was so spontaneously, Lenin's grape jelly came to mind and my feet were carried to the refrigerator and my hand reached for the jar of marmalade .. But 150 grams of marmalade was for sure.My marmalade is cooked with sugar containing pectin. The apples were traditionally very juicy. There was again a lot of juice. I added the marmalade immediately to the mashed first apple mass, it was very hot and immediately pounded everything with a blender. The mass became quite liquid. She rubbed the subsequent masses and immediately mixed with the first mass and again punched it with a blender. As a result, everything was almost liquid. I decided to beat it without sugar, because the apples are sweet and plus some raspberry marmalade, but there was sugar in it. Without adding sugar, the mass refused to whip at all, even with protein. Liquid. I had to add a couple of tablespoons of sugar for each bookmark. Things went better immediately. But the mass was whipped very badly. Already at the last tab, the kitchen process refused to work. Overheated, but managed to beat the mashed potatoes more or less decently before overheating. In total, each tab took 15 minutes to drive at the highest speed. But the aroma was very bright with raspberry-pickled marmalade. Dried all 14 hours. It could have been even less. But she gave 14 full hours. It is clear that there were "foam" layers. I smeared all the soufflé, which was safely cut off overnight, but after repeated whipping with a mixer, everything returned to normal. Dried, as always, 3 hours and at 54 degrees. Everything softened predictably. The pastille turned out to be very tasty, with a pronounced taste and aroma of raspberries.
Conclusion.
It is possible to make marshmallow with the addition of marmalade, although it is a little difficult with whipping the mass. But I attribute this to my very juicy apples. Yes, .. I had a hard-boiled marmalade. Not fluid. I'll make a reservation right away, there is no concept of jam, that's why I write marmalade, but all marmalade is cooked here with sugar, to which pectin has already been added. It is impossible to cook marmalade from ordinary sugar. Such is the sugar here.
The next experiment will be with apricot marmalade. He's just not thick.
