Yesterday was a marshmallow made with the addition of apricot marmalade. 250g for 2600g. applesauce. The mashed potatoes traditionally did not want to whip because of the juicy apples, although the juice was drained to the maximum, I thought that I had not whipped the mass, it was very tender and not at all sluggish, but flopping so well on a baking sheet. Plus, there was little of it, she was greedy for apples. I thought that nothing would come of such a frisky puree. But I was worried in vain, everything turned out great. It was dried for 14 hours and the layers lay in the dryer for three hours after the end of the time. The paper came off well and the layers themselves were not cardboard, but rather soft. Three hours of dry time, as always. Very good marshmallow turned out with apricot marmalade. Light acidity and aroma of apricots.
Conclusion. Pastila can be made with any kind of marmalade. 200-250g of any marmalade for 2800-3000g of applesauce. But the marmalade should be dense. Extra liquid in the puree is not needed.
