Girls, I'm sorry that I delayed so much with the explanations. But I jumped in for a minute and ran away again.
A little later I will write everything in all the details, so that everyone will get yummy.
Iris
Climbed into the topic of pressure cookers and came across the phrase Admin: "Have a meal with non-standard pots, and return to the origins - native rarities, which are no worse than heaped ones

This is how things will go, let's start making soups and cereals in pots in an ordinary oven "This was said at the very beginning of 2010

Well ... IS IT TIME ??

P.S. I love pots anxiously and cook in them quite often .. Only I have the most ordinary ones, still from Soviet times. of different sizes .. "

Girls, in general, I will report
With these cabbage soup I had real dances with tambourines.
It made me rebel to arrange a long languor right from the very beginning, that is, the heating had to be slow. I read in a tyrnete that one guy ... puts food in a pot, pours it with cold water and puts it in the oven at 110C for 3 hours. Well, I think the idiot's dream has come true - I will have correctly stewed nachs! After all, like, he pours cold water, and I - hot, so he’ll get ready for a stop. And I didn't even think to compare it with, for example, Lyudkin's meat pot - it cooks there at 170C for 2.5 hours! Karoch, after an hour and a half, opened the harshok, measured the temperature of the contents - 54C I think that even a cactus is unlikely to "get tired" in three hours - it would have had time to warm up. Well, okay, I think I'll get ready until morning, set 3.5 hours and went to bed. The oven had to turn itself off and finish my pot until morning.
In the morning I get up (from the moment of planting, the pot has been in the oven for 8 hours), I measure the temperature - 76C The cabbage soup is almost ready, you can eat, but they are not stewed! With a yell of "I'll kick in! FSEH !!!", I turn on the oven at 200C and leave it for an hour, during this time the temperature inside the pot, in the very center of the contents, has reached 96C - just right for languishing. Reduced the "fire" to 100C and left for another two hours. Then she turned off the oven and the cabbage soup was still languishing there ... hell knows how long. In total, the pot spent 13 hours in the oven. The cabbage soup turned out to be simply extraordinary! But! This kind of binge with the oven is no good. ... And this is what I decided for myself: I no longer want slow heating - this is a complete hopeless and a waste of electricity, even though I had a "night mode". Therefore, I will do this: keep at 200C for 1 hour, then lower the temperature to 100C (I really liked these slow bubbling), and I will leave it like that for 2-3 hours, and then the oven will turn off and the pot will remain in it until morning, shob my eyes mine have not seen him.
Maybe, of course, that man's pot was smaller, two liters, so everything was fine with him, but I have a five-liter pot, and the contents in it are 4 liters! So, the time and mode of preparation should directly depend on the volume of the pot. Look.
Elena Tim
Iris, it will be just great if you share your favorite recipes and tips with us.

Elena, and threw everything into the pot together, and everything raw, and meat, and potatoes, and kapustaru, right in a pile like that? Did you fry anything in a frying pan in advance, did you let it go? I never cooked cabbage soup in the oven ... Ah! and with or without a lid?
Elena Tim

recipe would.
Ilmirchik, this is Rarerkin's cabbage soup, only I forgot to throw in cucumbers, but I added stalk celery, and instead of meat I used smoked ribs.
Girls, don't do that! According to the recipe, these cabbage soup includes smoked prunes - it is quite enough for a smoked aroma. Because of the ribs, my aroma and taste turned out to be too rich smoked, as if I smoked cabbage soup myself. My husband really liked it, but for me it's too much.
And also ... don't tell Lyudka the current, knowing how prolonged languor enhances the taste of the dish, I didn't bother with special fries, and I only fried onions and tomato paste. Everything else went into the pot raw. And you know, after having poured it properly, the cabbage soup turned out to be just ferdiperdous. ... For quick cooking cabbage soup, it is better to fry according to all the rules.
All right, I quit speaking and go ... sleep to eat, Timon fries a sea cocktail there ...

Ilmir, I would cook the same with raw meat. Only I wouldn't cut it big, that's all. It will be 100% cooked.

With a lid. (I, damn it, I finish reading your post, after I write something)))

good, Lyudka, no, no! I don’t overcook anything in soup-soup-borscht ... nizzya me ... liver. Therefore, in a pot, without overcooking ... well, let them steam there for 12 hours! Bon appetit for a seafood cocktail, I'm asleep, it's already half past five in the morning

And I also really liked cooking in a pot at night: firstly, the real saving of electricity (at the night rate), and secondly, no one is hot from the oven - everyone is asleep, including me.

This is what it means that you have no slow motion. If it were, I would not be happy with dancing with tambourines, and I would save even more electricity.

Anya, this is just an overhead dish called a dumpling maker, you can cook everything in it, including dumplings!

Girls! But I have a Bulgarian pot, a divider goes to it, so you can cook not only in the oven, but also on a gas burner?

I subscribe to you! I love ceramics. I dare to suggest a recipe for a delicious dish, baked meat in a pot. this recipe is from the book by P. Weil, A. Genis, "Russian cuisine in exile" chapter "The Pot-Keeper of Traditions" It is easy to find on the Internet.

Light, yes I would have bought it long ago, but there is nowhere to put it. At least the pots have become a decoration of the headset.
But I lost my formula for cooking, so there will be no more dancing, at least with soups.

Happy ... and what to do with your nose? Smells - smells.
Timon grit, he doesn't reach him. And I myself somehow do not care, I didn't seem to smell the same.

I have ordinary pots, three for 0.5-0.8 liters approximately. One big one. I use three of them well, like everyone else. Large rarely, current when I cook a duck stuffed with buckwheat. Very big.
But they are quite common. But I brought others to show.

Do not believe me, I asked my husband yesterday at the exhibition of Belarusian masters beautiful cocotte pots. My dream is with caps! It is very convenient that all three of them get into the multicooker. Today, run to look for recipes for julienne and creme brulee. Won Angelkin buckwheat creme brulee as tasty and healthy. I recommend to everyone.

Beretsa Manka, sent to Tatarstan, rented out there for Lyudka (for all kinds of needs there - well, there, kisses, hugs and so on ...), and for intermediary services I pay a bribe in the form of a huge bag of smoked prunes. I don’t give Manka any cheaper - it’s not official for me.

Yaroslavna, yes yes, we are waiting for the recipe!

Chanakhi with lamb:

Can you get a recipe in a nutshell? At the bottom of the pot, finely chopped onion, peppercorns, bay leaf, then lamb chopped about 4x4cm, then diced potatoes, eggplant on top of the potatoes, also diced, the top layer of tomatoes is diced, add, pepper, pour boiling water between the layers, or flush with tomatoes, or a little more, depending on how we want, thicker or thinner, put in a preheated oven at 180 g for about 1.5 hours, depending on the meat, we take it out, try it with salt, add salt, if necessary, and add chopped garlic with greens, I put 1 clove on the pot, whoever loves greens. And we were also in the south and there they ate canakhi with pods, it seems like nowhere in the recipes, but we really liked it, if you add, then together with garlic and herbs, and put back in the oven for about 20 minutes, until the beans are ready. Bon Appetit)))

YaroslavnaThanks for the chanaha recipe. I bought a couple of pots a long time ago, they were called chanakhs. Now I will know what to cook in them.

But, I would still be afraid on gas ..

Ksyusha, but why be afraid, first slow heating, then you increase it a little, and then it slowly languishes. The box says that over time, a mesh of small cracks appears on the inner glaze and this is normal. Vobchem on my gas "normal flight"
Yarik
Tatyana, wonderful saucepan! And I'm also afraid on gas, and in the oven it's easier, less to follow)))
