When the cans are sterilized (the water is boiling in them), I take out the cans with pot holders and pour this boiling water into a bowl with lids. And I carefully shake the can of water droplets. While the jar is hot, moisture evaporates from it very actively and by the time the puree / jam is laid out, it is almost dry. Then I put the container with jam / puree in the microwave for 5 minutes, it gets hot again. and then I put the mashed potatoes in the jars, take the lids out of the bowl of water, shake them off well from the drops of water, roll the jars with the lids and turn them upside down. The temperature of the puree / jam is enough to "kill" those microbes that may have decided to repopulate the jars. Not a single jar sterilized this way exploded, and what was inside was not moldy. Moreover, I do not wrap rolled up cans. but for your own peace of mind, you can do it.

Ludmila, well ... I brought in one small pumpkin and decided to try it. Half of the pumpkin, peeled and cut into cubes, is exactly 1.5 kg. The pumpkin was very dense, with a thick skin. There were two parties in total. At the exit - a 1.5 liter jar of puree. But! In the second batch, at the very beginning, I added a half glass of water to the bottom of the container and closed it with a lid in which I cooked, because the pumpkin did not want to become soft and warm up. Microwave power 850 W. In this case, the first batch turned out to be just a darkish color, and the second just a saturated orange. That is, I obviously overexposed the first batch. And in the end she took up a blender. Because the fibers of the pumpkin were visible, and I wanted a homogeneous puree.
I cooked porridge with three large tablespoons of this puree and with slides. And immediately, having tasted it, I remembered the very taste ... distant from childhood, when my grandmother cooked this porridge in cast iron in a Russian oven - bright, rich! I felt sad .... I remembered my grandmother.
