Pumpkin and tomato sauce

Ingredients

Pumpkin (net weight) 500 g
Tomatoes 200 g
Onions (net weight) 200 g
Raisins 30 g
Sugar (better brown, I have white) 250 g
Ginger root 3cm.
Garlic 1 tooth
Salt 1h l.
Ground nutmeg pinch
Apple cider vinegar (not used) *

Cooking method

  • Peel the pumpkin, cut into 1cm cubes.
  • Peel the onion, chop finely.
  • Pass the garlic through a press.
  • Peel the ginger, grate on a fine grater.
  • Pour boiling water over the tomatoes. then with cold water, peel, finely chop.
  • Mix everything, leave for 10 minutes until sugar dissolves.
  • Bring to a boil, reduce heat, and cook without a lid. stirring until the liquid evaporates for 40-50 minutes.
  • Arrange in sterilized jars, roll up, cool.
  • The output is about 600 ml.
  • * I did not use vinegar. In the original recipe, 200 ml of it, which for me is just beyond the limit, is put immediately along with chopped vegetables. I wanted 1 \ 2h. l. put it in jars before laying, but forgot that, as it turned out, and right.))

This was demanded by the main eater of the sauce - the husband. He says that I still have time to make jam, but without sauce he has no life. I started to take a sample at the 10th minute of cooking. Chewing on a sandwich with undercooked sauce, he said you were a cool girl! I asked you to convey thanks, respect and respect. Which I do with pleasure. And from me, Ksyusha, thank you very much! The husband is happy, and, therefore, I am. I will repeat it tomorrow, but with more pumpkin, because these 2 jars will last for 2 - 3 days.

The pumpkin was very dense, I stewed it all for 15-20 minutes under the lid (I didn't spot it exactly), and then, when the pumpkin was stewed, I spurred everything with a blender (I was afraid that the sauce would be very thick). It turned out very tasty! From this amount I got 2 half-liter jars and another 70 grams - for testing)))) THANKS !!!

It turned out 1.2 liters plus 100 grams per meal. 5 small cans of 0.25 each closed.
