Fermented tea made from leaves of garden and wild plants (master class) (page 275)

There should be no juice at all after scrolling. It should be just wet granules. If there is juice, the leaves are badly withered.

Elena, you don't have to take them down well. Lightly knock the bottom of the container on the table, and they will settle down as they need. And if you crush them hard, then it is difficult to separate the granules before drying. There is a risk of crushing the granules when loosening the mass before drying and getting a lot of crumbs.
Lyudmila, thank you! Tea turns out more correct every time
My granules were usually slightly moist and not strong, many were destroyed, although the leaves were always mixed. I will try to wither for less time.

Elena, no, no ... Wait! That is why the granules were destroyed because they were poorly cured. This is evidenced by their juiciness and moisture. On the contrary, it is better to wither the leaves, then the granules will be stronger (just not currants and raspberries - they always crumble). Poorly wilted leaves always give crumbling granules !!!!
Elena_Kamch
Lyudmila, the fact of the matter is that the leaves were overdried, a fairly large amount. Even thick strawberry leaves feel dry to the touch!
This is how I always check for wiltedness: I bend a stem or part of a leaf. And here the leaves were completely dry ... And there was almost no moisture. Therefore, I crushed it as it should, in the hope that this way the fermentation would go better.
Elena_Kamch
I studied the last pages ... and was really upset
I just happily planned to make tea with berries
But still, everyone needs their own experience, so I'll experiment unequivocally, and then we'll see ... Moreover, something, and we have a lot of raspberry bushes! Can I make raspberry teas in winters Mono-raspberry never tried
Elena Kadiewa
Elena_Kamch, last year I made tea from everything, it was a bit late to start, but everything was used: viburnum, mountain ash, honeysuckle, sea buckthorn, raspberries, strawberries, currants, I collected a little bit of everything and made teas, and you also have apple and cherry growing ! So go for it, everything will work out!
Elena_Kamch
Elena, thank you! Last year, I also started with the wilting of willow tea and collected what I found all autumn. They drank only their teas, but somehow they quickly ran out. I personally do not have cherries, I am trying to beg from friends. I have never tried it with cherry leaves yet.
What did you do with honeysuckle and sea buckthorn? Also the leaves were collected and mixed?
Elena Kadiewa
Yes, all in a heap and dried, then twisted (God! Even in a manual meat grinder!)
francevna
Yesterday I cut out dry raspberries, and then cut each leaf off, I gained 850g. I want to do mono.
Elena_Kamch
Quote: elena kadiewa
Still on a manual meat grinder!
Yeah, we are also on hand. Well, my husband is delighted with the tea and he turns it with pleasure And he tries the very first one without waiting for dry fermentation.
I can hardly imagine the leaves of honeysuckle and sea buckthorn ... They are small and tough. Wither them too?
Do you need to send raspberry leaves for mono tea to the freezer after drying?
Elena Kadiewa
Last year, my peasants played it by hand, then they tried some seagulls and bought me a second electric meat grinder for a summer residence (one in the city, I felt sorry for her last year, but in vain!). And last year I just dried all the leaves (there was one refrigerator and it contained only meat for the child), and this year another refrigerator was brought to the dacha, only currant leaves were frozen, her leaves quickly disappear. And I haven't made raspberries at all.
Elena_Kamch
Quote: elena kadiewa
And I haven't made raspberries at all.
I also! But we still have everything ahead!
Are raspberries ripe in your area? My daughter is studying in Novosibirsk, she says, they are selling.
Elena Kadiewa
Yeah, ripe, lingonberries are ripe too.

Elena_Kamch, Elenaof course try it! Everyone needs their own experience. I advise you to freeze any leaves after withering. Then they will be better processed in a meat grinder. Good luck to you!

Mono apricot with berry
I decided to make tea from apricots. Well, as always: the leaves were harvested / wilted / thawed. I prepared apricot fruits, after cutting each half into 4-6 parts, that is, approximately the size of a raspberry.
Fermented tea made from leaves of garden and wild plants (master class)
Scrolled on a large grate, pouring the scrolled mass with berries

As a result, after the first scroll, this is what happened:
Fermented tea made from leaves of garden and wild plants (master class)
Here is the mass after the first scroll - it is close to any granules and does not look like - trash in one word.

I first decided to try the second scrolling on the same large grid. Conclusion - for the second scroll with berry a large lattice does not fit categorically, since the berry does not completely twist and we will not reach the goal for which, in fact, we are adding the berry - that is, the maximum distribution of berries by weight to strengthen / consolidate the granules. Here is a photo showing that the berry remains almost intact:

Then the grate was replaced with a medium one - then the process began, that is, the berry was scrolled exactly as needed. Here is the result on the middle wire rack - and immediately you can clearly see the formed granules practically without any trace of berries:

Mass before fermentation:

Fermentation was again carried out in the MV - yogurt mode for 15 minutes - the valve is removed - a damp cloth on top.

Then I dried it in the oven. Drying took a long time - because on that day it was raining outside and the house was wildly humid.
Here's what happened as a result:
Fermented tea made from leaves of garden and wild plants (master class)
Conclusion:
Colour - finished granules have a rich dark color - almost black
Granules - strong, small - there are all such trash

Smell - this is the most interesting moment. Began to dry. The smell for me was not clear at all (the mass did not smell of either mud or hay, like others) - I had cocky the smell - yes, exactly "daring" - I could not even find any other word. It didn't stink, but it smelled - harsh - bold, something reminiscent of the smell of apricot with sourness - I even had the thought that the apricot hour would not stand on the same shelf with the others, because I smell delicious there. In the morning I put the tea in a pillowcase - hung it on the street - a day on the street - and the apricot "opened" - it smells delicious - tender and soft. All the same, teas should be given time to "adapt". In general, I follow the apricot further.

I will add to the conclusion: I added 12.79% of berries by weight - for an apricot it is few - at least 15-17% of the mass of leaves - then, I think, there will be much less dust, or maybe not at all.

Comments: I will explain why I first scroll the leaves without berries - I need to see what mass will be obtained only from leaves - to then determine the amount of added berry mass. The mass rolled for the first time looked like dust - in principle it was expected and expected.

Well, now, returning to the topic of berries in tea ...
lappl1Lyudochka, I completely agree with you that this is no longer loose leaf tea. Maybe it would be more correct to call it "tea with additives"?
After all, this is what we call shop teas after all.
And now to the point.
I don’t know if I would dare to "plump" a mixture of berries into the mass of leaves - just like that - without tracing either the number of berries (that is, their% in mass) or their composition / mixture) - most likely not - or, more precisely - at all would not.
Why did I start making tea with berries - I just "burned" to make exactly raspberries and granulated. Well, I don't have enough hands to sit, twist and cut - twist and cut - faster than a meat grinder - and I shore every minute.
Knowing that the raspberry leaves behave "incorrectly" when scrolling, I decided to add berries. Exactly the same with apricot leaves. That is why I added berries to cherries - honestly - I don’t know myself, but I wilted the berries beforehand.
Although no, I know - after all, teas with additives are also delicious ... It's kind of a little experiment.
The next batch of cherries will definitely be without berries - then I'll compare which tastes better.
Now I try to make only mono teas - in order to determine what exactly to my taste and what "will take root in our family."
Next in line I have teas from apple, plum, pear, grape and wild strawberry (if I add the required amount of leaves)
I definitely won't add anything here. Again - I won't say this about strawberries - I don't know how they will behave after scrolling - although I can guess.
Perhaps (or maybe not) I will still decide to add berries or fruits to other leaves - provided that I already have this mono tea without berries. But this is in great doubt for me - is it worth it? Just find out the taste? I don’t even know - I don’t promise, but I don’t burn with this idea either.
My personal opinion is this: mixes are not worth enriching them (I wanted to write "spoil") with berries. Those leaves that are "docile" when twisted are also not worth adding berries. But in granular mono teas (such as raspberries, currants, apricots) can add berries, but very carefully - that is, clearly the amount that is necessary to fix the granules ... This is my personal IMHO ...
Litter for a lot of letters ...
Linadoc
About honeysuckle - tea is pleasant, but without a special taste, color and aroma, in mixes it is normal. About berries - I add 20 pieces of berries to a sheet of leaves, wither along with the leaves, ice-thaw together too, then the aroma and consistency suits me. Here I make a pear and raspberry in Zakhar's way, put 15 raspberries and a finely chopped pear 2 pieces, wither everything together, freeze it, now it unfolds, then I will freeze it again, but the aroma is already stunned!
lappl1
Anyuta, it is even difficult to comment on your experiences. So everything is clear and understandable, no matter what to add or subtract. One thing is clear that your experiments with teas with additives will serve the tea-makers well if they cook the same. Your scrupulous approach to business is amazing! Well done! As always, I am delighted with your posts.

I understand your position about not twisting the apricot leaves for the first time. You wanted to determine the right amount of them in the tea. But if you twisted the first time with them, then the second time they would not come out not twisted. And I didn't even have to change the grille.
And, most likely, there would be almost no trash. And if you blender berries-fruits, then in general beauty would turn out. But I'm just talking about my experience. And everyone decides for himself how and what kind of tea to prepare.
Anyuta, once again, thank you so much for such detailed and meticulous experiments and posts. It was very interesting for me to read them. I am sure that other tea-makers will take your experience into service.

Dunno question for those who make tea with berries. If they interfere with or slow down fermentation. Why can't you ferment the leaves first, and then roll the granules over again, this time with the berries? And send it to the dryer.
Pysy. until my experiment of trying to make something like tiled tea failed. The tile is loose.

Most likely, you need to press hard, not with your hands, but put some weight on it.

I just discovered such cool topics today and took such pity, after all, how many I cut, sawed and burned in the country ... Ehh-ho-ho .... I will catch up, I really want to learn how to make an audible and healthy tea !!! STUDYING ,,, So many discoveries !!!!!
Radushka
And I decided for myself. I will not make teas with berries. Even from those leaves that are not granulated. The granules are beautiful, but the taste ... Well, it’s not tea!
The eldest son, however, liked these. But, in general, if there is less than 30% in cherry tea, he considers it simple.
For him, I separately made (and will make) a mono-cherry. Let as much as your heart desires, add to the finished tea for yourself.
And to me, if there are more than 50 g of cherry leaves in a mix of 1000-1200 g of leaves, all tea smells like cherries and it also tastes like cherries. Too "poisonous".
Py. sy. Autumn is getting closer. And the final work in the garden (cleaning the plantations of strawberries, raspberries, blackberries, pruning shrubs and trees), which I always did with difficulty, now they pass with such pleasure and excitement! The same LEAVES are harvested! So there will be TEA!
Radushka
Cinnamon, OlgaOf course you do! This is interesting, and healthy, and very, very tasty !!

Cinnamon, Olga, it is far from falling leaves, so you still have time to do it. And if you cut out your own, then you can visit your neighbors at their dachas for leaves.

Thanks again. Maybe I'll even mix it. Mono all the same I will not do, the leaves are too small, collecting dreary ..... and if the taste is not the best, then okay.

But when you have all the leaves fall off (and we still will, probably) we will choose from under the snow and brag about who has more leaves in the freezers.
francevna
Now I have 6 kg of dry leaves in the freezer, I need to make tea. I was waiting for the heat to subside, and tomorrow we will be +36 again.
iriska3420
francevnaAnd we have the same heat. My husband brought pear leaves, and they already seem to have dried for a week. The whole batch, and it was a pity, but threw it away. And the apple leaf is more persistent and fermentation is not more than 4 hours.
lappl1
Irina, and if you put them in the freezer? Should be softer.

We picked on Sunday in 8 hands in 15 minutes 1.5 kg of apple leaves and wild pears. The pear was like plastic. And so it remained. So what? All the same, I put it to freeze. I'm going to thaw-freeze a couple of times before fermentation in the mix.
I will definitely not throw it away!
francevna
iriska3420, Irina, I had no raspberries, but while I cut it off on a leaf, I began to dry out. I revived her by washing, the water was dirty, and then I twisted it into a cloth. It's a pity to throw away such stuff, and what will happen with the weather is not known, maybe everything will dry out.
iriska3420
All the same, it was necessary to try to revive the leaves. It was necessary to soak them and wrap them in cloth. All the same, a good thought always comes after. Tomorrow I will rehabilitate myself. The leaves have not become the best for these few days. And the weather forecast, alas ... for thirty.
lappl1
Irina, we have Galina Iv. made tea from dried (literally) leaves of fireweed. I dried them on the balcony, but they dried up. She soaked them and made tea. She said it turned out gorgeous. So try it. It should work.
iriska3420
Wow - no news for almost a day. Probably today is tasting day

lappl1, Lyudochka, on Saturday I'm going to cut raspberries in the village. I persuade myself in advance not to rush, to extend this process for three or four weeks. Because about 15 kg of leaves are expected. And you also need to pick the appropriate amount of apple trees! Horror, in short. Where did you get on my long-suffering head with this delicious tea?

The tea is very tasty. Did 2 types. Strawberry leaves 400g + slightly gooseberry. Cherry leaves 600g, blackberries with leaves, flowers and berries 400g, slightly raspberry leaves, currant, gooseberry and apples - a little. She folded to insist. Cherries are impressive, additives can ennoble. I will definitely do more. There is no herb taste at all.
Lind @
Connoisseurs, tell me. There are some cherry leaves that have just been dried. It's a pity to throw it away, because I have very few intact leaves in the area, and the mix with cherries really liked the taste.
So you can somehow use dried leaves? Just add dry tasteless.
Radushka
OlgaI don’t know how the experienced ones act, but my precious currant leaves have dried up (I have very few of them). Gently put it in a basin, poured it with water in a quiet stream to cover the leaves. She held it for a very short time, carefully drained the water (she poured out the sediment several times), then put it with her hands on a terry towel, as thin as possible. When dry (no water drops are visible), twisted with all the other leaves in the mix. The tea came out no worse than the first two batches with normal leaves.
Lind @
Thank you. I'll try.
Tata
Ludmila, please tell me, only petals should be dried near phlox flowers, or it is possible with legs.
lappl1
Tata, I dried with legs. They do not belong to the receptacle or sepals, so it turns out great.
