There are few berries, so they did not give any aroma or taste, and the leaves were not fermented properly. And if I added more berries, then they would pull the blanket over themselves (with taste and aroma).
Have you thought about it? And I constantly think and the thought does not give me rest - what kind of tea is obtained in the end - berry or leaf... My opinion is berry. And the leaves are just there, for the mass. They may object to me - but it's delicious ... I agree ... But I want to make tea from leaves according to all the rules, without violating the technology due to excessive moisture of the mass. I want the leaves to ferment and give their unique taste to the tea. And the juice of the berries, making the mass too wet, only interferes with this.
After all Why do the leaves dry? 1. To facilitate processing before fermentation (soft leaves curl better and give non-crumbling granules). 2. To remove excess moisture from the leaves, which interferes with fermentation or completely stops it (and we again add juice to the dried leaves with the berries.
I believe, that the right leafy berry tea can be made, but for this you need to wither the berries properly. Then the leaves are fully fermented, and the berries, strengthening the granules, add their wonderful aroma and taste. But this is a longer process, since the berries dry for a long time even with a dryer.

So my impressions of tea with berries.
The raw materials were: grapes, raspberries, black currants, cherries, apple trees, apricots, pears. I did not weigh the leaves individually, tore them and threw them onto a blanket for drying. The leaves wilted for about 3 hours just on the coverlet, then wrapped it tightly in a roll overnight and put the roll in a bag. In the morning I put it in bags and sent it to the freezer for 3 days.
After the freezer weighed the leaves of 1,650 kg.
There were ~ 300g of black currant berries, 1 full glass of raspberries.
Scrolled 2 times in a meat grinder with berries. The first time on the 8mm grid, the second time on the 2.7mm grid. After scrolling, the granules were thin, like worms, but strong and not wet.
Fermented for 5 hours, first wrapped, then just in the forge under a wet napkin.
There was a problem with drying. There was a lot of mass ... and I had a simple gas oven, and the thermometer was just inserted ... and even the guests were distracting.
I turned on the AG, but I also have a simple AG, without switching speeds and the temperature starts from 150 *. I put the mass on a baking sheet, but I see that a very large layer is obtained. I put it aside for 2 pallets of AG. In the oven, the temperature was ~ 120 * -130 *.
In AG, I immediately put it on 2 levels with an expansion ring. But in 20 minutes the pallets had to be rearranged all the time, since the drying was not uniform.
In the end, I switched to one pallet, all the time taking the pellets from the oven and into the AG. And the already dried granules with AG were poured into the dryer for drying. Here I already had no problems with the dryer. Breeze for 6 pallets.
I made a conclusion for myself: do not twist so many leaves at a time, it is difficult to dry, maximum 1-1,300 kg. And I got 2 kg with berries.
When the tea was being dried in the dryer, a sample was taken. My daughter liked it, I didn't figure it out too much. It seems delicious, but I did not get the expected taste from the berries. But there was no tea astringency either. Just a slightly slight sourness and taste, I couldn't even understand what. But ... the tea was still drying, and what could be expected certain ...
The granules of the worm are very strong, there is little dust. Although I expected the worst, when I put the mass on a baking sheet, it took up in lumps, which I had to break with my hands.
Now I have weighed dry tea in a pillowcase - 830 g (then I will weigh the pillowcase separately and discard the weight).

I read teas and make teas. So I lit up raspberries with berries to make. The leaves wilted, froze for 3 days, then twisted the frozen leaves and in parallel added 1-2 raspberries. Spun on a manual meat grinder, spinning sooooo hard, I had to do the reverse every now and then. Then she spun it a second time, the granules became denser, fermented for 6 hours. I first dried it at 130-140 degrees, the oven was ajar, then I simply opened the oven and dried it out. The stove is old and the temperature does not drop on the thermometer when the oven is open, but remains the same. The smell when dried was very tasty. I brewed tea immediately after drying, the color is dark, but transparent and tasty. There is no compote taste. I am satisfied with the tea, but I will hardly do such a feat by hand. In mixes with other leaves, raspberries spun normally, and mono was just some kind of horror.
And from the mixes, I really like 60% apple and 40% cherry. I like the color and taste and aroma, although apparently the taste is different from different apple trees, but still very tasty. Rustic teas from 6-8 different leaves are also very popular, but apple and cherry are slightly more to your taste.
