Ivan tea (fermentation of fireweed leaves) - master class (page 11)

If you are talking about fireweed, then yes! The smell is magical! How long have you fermented it now?
Yes, about fireweed. This one stood for 11 hours. My process has changed somewhat. Still, the meat grinder is noisy. to twist at night. Therefore, I wither my leaves, wrap them tightly in a sheet and leave them until morning. In the morning I twist and leave for as long as necessary, but not less than 6-7 hours.

Today I was still collecting fireweed for the village. And cherries separately. On the advice of Rada, I now add it to black tea. Delicious!!
lappl1
Well, yes, you won’t make any noise at night ... And now, in this heat, I don’t ferment anything for more than 12 hours. And I try to ferment the garden ones for no more than 6 hours.

Regular black? Our cherries, fermented? Or just dried? It seems to me that wherever you put the cherries, everything will be delicious!
Me now religion my tea doesn’t allow store-bought tea ...
Omela

Our cherries, fermented?
Yes. I drink black in the morning. I can't live without him.

Quote: lappl1

Here, probably, everything depends on personal preferences. I'm not that much of a connoisseur yet, but I like the heavily fermented. But in general. I don't focus on time, I focus only on free time.

Quote: lappl1

Yes. I like cherry the most.

and I am good strong coffee. I also can't live without him ...

I also have coffee, but more than once, so the cups are small, so that instead of one glass there are 2-3 cups, and I like only freshly brewed and strong tea, no tea bags, so in our tea I probably won't have enough astringency. And Kuril tea and layering itself gives, and recently I broke off the twigs and into the water, so I have already given roots.
Loksa
And I drink strong (5) black coffee in buckets, I also like strong tea, but I can drink different types, most importantly hot.
Today I'm going to pull strawberries, there are unnecessary shitsu thickets.
And Omelka in the photo looks very much like a "Cumberland" hybrid of raspberries and blackberries. I wonder how she's in tea? I also have such a stub growing, I wanted to throw it out, I'll wait for now.

Lena, special thanks for this experience. I will also go cut it and put it in the water - I will multiply the Kuril ...

Unlikely. In Kazakhstan, such a hybrid is called ezhemalina and it is simply huge in size - 4 times more than the raspberry or blackberry itself. I hope that Mistletoe herself will tell us about the taste of that tea. I think she will be great in tea.

At the beginning of the topic, someone also asked about jasmine, but that was the end of it. A neighbor has a huge jasmine bush. She gave me the go-ahead for him. So I can make tea, but my hands haven't reached it yet.
if jasmine is a chubushnik, then I am also very interested in the results
francevna
Ludmila, just read about cinquefoil, she loves to "get a haircut", the more you cut it, the more it grows.
lappl1
Alla, Thank you ! I did not know about that. She cut her only in the fall and quite a bit. Now I will do her hair, my dear ...
Omela
So a "holiday" came to my street... Opened a month old jar today ... covered in mold. It seems to dry well .. and this is such an ambush.
lappl1
Ksyusha, well, you give it! Zhaaaalko !!!!! Urgently open all the tea and dry it! Do not rush to put the tea in the jar, you will have time. I even dried it out in my house last damp summer, nothing got moldy .... True, I stoked the stove ... But a little bit. She did not do much weather in the house, she just removed the dampness. And this summer everything is so dry ... How did it happen? Just in case:
Tea ready indicator - when you press on the tea leaf, you feel the hardness. And the tea leaf breaks. If the tea is not completely dry, then it will feel soft when breaking. And it is difficult to break such a tea leaf - it seems to be smeared. And one more thing: if you shake the pillowcase with dried tea, you will hear a rustling dry sound. Not dried tea has almost no rustling. Besides, the aroma of dried tea is weak.
Omela
Yeah, it's a shame ... 20 hours of fermentation was.

Quote: lappl1
If the tea is not completely dry, then it will feel soft when breaking.
There was no softness .. definitely .. it dries up in the bag and I touch it from below, it does not crunch. I'll go open all the cans.

I constantly stir the bag to stir the tea. Maybe the jar was not tightly closed and dampness penetrated it? Although, where does the dampness come from now?
I also noticed something. In my photo in the recipe, the bag is very thin, all transparent, made of some kind of non-woven. The shoes were wrapped in it when they bought it. But I have only two of them. I also sewed bags from an old linen sheet. Tea takes much longer to dry in them.

And these, damn it, there too ...
Omela
That I also bother .. in short, a mystery.
lappl1
And with new tea, you can do that. Yes, and dry the old one for reliability once. Pour tea on baking sheets, heat the oven to 50 *, turn it off and keep the tea there with a slightly open lid. You can turn the oven on and off several times. The tea will not dry out from this, but it will dry for sure. I did this a couple of times last year when I doubted that my tea was dry.
And it is best to put the tea directly in the bag in the dryer, turn it on for 30 * and hold it for a few minutes. Turn off the dryer, let the bag cool down and the tea in it. Check tea. Turn it on again, if necessary. I did this too last year, because it was a completely fig summer - it was damp and I didn't want to rustle the tea.
Omela
Oooh .. like I checked all the teas - they rustle in the cans ... anyway, I'll be more careful.
lappl1

Now I'm also afraid of mold ... I still have it in bags around the heater

Well, we broke down and brewed a week's tea.
What I felt: the smell seemed to be fragrant, but it reminded me of the aroma of rye bread crusts if you pour boiling water over it. The husband saw nothing of the kind. The taste really has nothing to compare with, I had sourness. The husband again did not notice anything gee-gee. Fermented for 20 hours, but the second time, as usual, did not brew, lightish comes out. Although I didn’t read the brewing rules and maybe I just stupidly put less.
These are the first impressions and acquaintance with fireweed.

This weekend, unlike the previous ones, I gathered leaves. Well, what is left on the plant. I put them in the freezer, then in the train, then in the refrigerator, finally there was time. Went still and began to twist. How little juice, they simply do not need to curl, crumble, my hands ache, I had to wet my palms at the end to facilitate twisting. Fermentation for 7 hours. I don’t know what will happen there, but the juice is very good. few. She cut dry rolls. And this is only a week difference between the fees!

Olya, strange smell! I do not know what to say! There has never been such a smell! Most likely, there was a weak and long fermentation.

Today I brewed the same tea for the fourth time (pictured on the left). And the color is there, and the taste is good, refreshing. And this (on the right) is the first brew - I brewed it a couple of hours ago - we didn't drink it all.

Ivan tea (fermentation of fireweed leaves) - master class

I brew 2 heaping teaspoons for 1 cup of boiling water. In general, granulated tea ferments better and turns out darker.

Yes, today I twisted it in a meat grinder, slightly dried. Dry leaf, a lot of dust. Whatever you say, June tea is the best!
Altusya
Well, and I shrugged it off for the test, he hadn't even brewed for a month yet. Therefore, there was no color.
And about the smell, I don't even know. It smells like that to me and that's it.
lappl1

Olga, the color happens immediately. This smell and taste appear additional.
Altusya
Means little put it.
We must ask the girls who smells like. What associations?
Linga
Olga, read your comment and immediately ran to brew tea) It smells great! As soon as I poured boiling water over it - the smell is floral with sourness, stood for 10-15 minutes, brewed - the color of black tea, the smell is not very bright, dried fruit, the taste of good black tea of medium strength, in the aftertaste sourness and even astringency from somewhere! (fermentation 18h, aging a little less than a month)
Well sooo I like him!)))
lappl1
Linga, I am very glad that you have made tea and like it. Remind me, please, what kind of tea do you make - leaf or granular?
My opinion is that granulated tea has the richest color and taste. And the scent, of course, too.
Altusya-Olga, did you make granulated tea? If not, try it. You will see the difference.

Ol, as they say, inspired .. once my mother bought oregano and mint in bunches from grandpa. She brought it to me, I brewed it and ... I couldn't drink, it smells like felt boots. So I threw it away.

But in essence, I arrived at the dacha today, and left Ivan tea in a bag in the house to dry up and forgot about him. I walk past the rope back and forth and cannot understand what smells so good. She raised her head and immediately remembered. I brew at the rate of 1 hour. l. per person + 1h. l. extra for the kettle. The color is very intense, the taste is tart with a floral aroma.
Linadoc
Girls, I want to take a break from duty for a minute and share! I cook my compote from frozen, and now from fresh, my berries and fruits in Shtebochka every day (or even a couple of times a day), well, they don't drink anything else with me! Now only apples are available, and the compote from them is almost colorless. Give, I think, I'll add a little Ivan-tea (ready-made granules), well, the apple leaves remained on my apples, I also added. So such beauty and deliciousness turned out !!! Tea color, but apple taste! Mine were told to repeat.
Linga
Lyudmila, I make loose leaf tea, I have never made granulated tea (I make tea when the child is asleep, I can't turn on the meat grinder - I twist the rolls and immediately cut them, and then for fermentation)
Loksa
And I, too, hangs in a pillowcase on a rope and I do not take it off, it will pull with a skew and it tastes good. It smells like Ivan-tea flowers.
And I probably masochist I make granulated in a manual meat grinder. And now the material is accumulating in the freezer, I'm just delaying the twisting time, well, sure hee hee

Linadoc, well, you are an inventor! I also don't like the color of apple compote. I walk around the garden and ditch the dry currants from the bushes a little to revive the color. I didn't even think of tea. Everything, a way out is found Thank you !

I don’t have Ivan tea, but the aroma is all over the house. Tea is dried in bags on the windows behind roller blinds, we close the windows with everything that is in the house, and then ordinary curtains. And each window has its own aromas from fruit teas, one sleeps very calmly with these aromas.

Ludmila, my daughter-in-law bought me a bunch of dry Ivan-tea at the grandmother's market, no grass smell. With a height of 30cm, together with the color, I wanted to try to brew, but something does not inspire confidence.

Altusya
Mdyaya ... maybe my nose is different
People, I brewed granulated just the same. It is necessary to brew again.
Little guy, I will not say that it smells of felt boots, but this smell of bread is very good. pleasant, gentle.
Linga, here our tastes coincided, it also gives me sourness.
Linga
Lyudmila, someday I will definitely make granulated tea! (only, most likely it will be next summer ...)
Olga, tea with sourness - floral or fruity, but not bread tea !? Tasty!
By the way, in a couple of months I made a lot of different teas (from different plants), but the fireweed is a favorite! everyone perceives it as ordinary usual black tea (in a good way))) large-leaf good quality. Tea from other plants, mono or mix, still feels like "herbal tea" - delicious, but for lovers of herbal teas ...
I wrote in another topic, but I will repeat: it is very tasty to brew Ivan-tea, add a couple of "washers" of cherries and, you can still have a couple of spoons of "Fireweed honey"! (And in the evening in the gazebo, relax, dream in a pleasant company ...))))
Altusya
No, no, the taste is not bread. The smell is present. But I'll try it today. Because the husband does not smell anything))
Linga
))) I'm already completely lost in tastes and smells))) hang in bags, different teas are dried! Olga, I used to read it in the comments of others, and now I am writing from my own experience - you put it on for now - let the strength of taste and smell gain - in a week it will be different, not to mention a longer "dry fermentation"! (Lyudmila, do you feel how smart we all have become here? What terms do we now own ?!)
Altusya
Girls, I brewed. I took a leaf, dried it in the country in a frying pan.
1 tsp on the glass and one on top. This color is awesome. Brewed specifically. I poured myself and diluted it with boiling water, because I can't drink such a strong one. The color is really the same as usual.
Now about the smell. It seems that there is no bread, but there is something, I cannot describe. Well, maybe because it was drying in a frying pan, maybe a little bit primed or something. Well, such a shade.

The husband said he was tart.

Yes, I too will not sniff, only bother.
Gala
I made tea in June. As soon as I did it, there was no special smell, I thought it didn't work out at all. But he stood in a tightly closed jar for 2 months and an amazing smell appeared. It smells to me fruity-prune-chocolate. The taste after brewing, if not diluted, is slightly tart with an admixture of either licorice or valerian.
Altusya
Oh how!
Everyone will probably be different. After all, the methods of drying, and the time of fermentation, and the place of growth, soil - everything is different for everyone.
Therefore, virgins, I stop bothering and tormenting you, and enjoy the fact that I have another month or two.

Olyawhat is your frying pan? It is necessary to dry on a thick-walled. On thin, there is a risk of burning the tea. And then it will smell like felt boots, burnt newspapers ...
And the fact that the taste is tart is good! And the sourness in deep fermentation tea should also be. Nice and light.
