IvaNova, I didn’t think about pushing willow tea when Mistle answered. But it is so, you cannot collect Ivan-tea any more when it faded and began to fluff. The leaves are very coarse, yellowed, diseased, eaten away by all kinds of boogers. And fluff is not the most pleasant when it comes across in the finished tea. And with the rest of the plants, of course, snow ... But, sometimes, there is enough leaf fall. I went for cherry blossoms once at the end of October. Yesterday there were still leaves, but today I came - they are all on the ground ... Even a bad thought slipped through - whether to collect from the ground ... But then I came to my senses in time ...
Linadoc
Girls, 18 years ago there were only 2m tall weeds ... today on my site, besides the meadow of Ivan-tea, ordinary currants, raspberries, plums, apple trees, pears, rowan berries, strawberries, there are blackberries, irga, blackthorn, cherries, gooseberries , strawberry, honeysuckle, pear, jasmine, pine, juniper, larch, spruce, blackberry, mint, lemon balm, turtle, grapes, berserk, basil ... maybe I forgot. I am sitting on a pine tree, 13.5m, 4-storey building, only here the Internet is caught. I have reported on the main, I will make it out of others, I will report. Until I made raspberries + dried fruits, thorns to the previous ones, tomorrow I will twist larch.

Linadoc, I'm in shock again! To send a report, climb a pine tree! Extreme, and more! Be careful, okay!
Linadoc
This is our 21st century !!! There is a queue for INET for a pine tree, a yard! HOW MUCH YOU WALK - this is the Internet !! I
As a researcher, I research everything, try it, I follow everything myself, since I am a large state employee. But everything is under control, and everything is natural. I will make larch and more - I will report, I have a duty, there is a normal Internet.
Linadoc
Today it’s cold, I’ve set up a Russian stove, it’s heated, there’s bread, I’ve put raspberries, willow tea and thorns next to it, they’re fermenting, I’ll put them on drying at 6 am. Larch tomorrow ._

Okay, Linadoc, okay! Better on duty than from a pine tree! And then I was already worried!

Never mind, tomorrow they promise warming. And a decent one - up to 30 *. So I'll flood my Russian closer to autumn. And only exclusively for tea!
londar
good evening, Ivan wilted the tea, stuffed it into the freezer, and how long it’s there, I don’t know, I’m unlikely to get to him now before Wednesday, okay
will be?
lappl1
londaruntil your hands reach him, you can keep so much in the freezer ... Everything will be fine.
londar
thanks, as hands reach I will do and report.
Katris
Ludmila, and can the frozen leaves then pass through a meat grinder?
lappl1
Kate, I didn't do that. Fireweed is very "wet" after freezing. Even from simple twisting, such leaves give a lot of juice. And good tea is obtained when there is not much juice. Try rolling rolls. In frozen fireweed, they spin very easily. And fast. I twist 1 kg of leaves in 40 minutes ...
Katris
We collected a lot of leaves, ran one part through a meat grinder, everything worked out. And the other part was frozen, so I'm thinking about what to do with it. Let's try to spin the rolls. Thanks for the detailed recipe.
lappl1
Kate, to your health! Of course, try the "handmade" version of the tea. There will be an opportunity to compare. Some people like this tea more.
Mariii
lappl1, Lyudmila! Help! SOS! etc. ...
I go, periodically to my "bins" and wipe tea, which is for the winter. Today I open one of the jars of fireweed from the last batch, and ta-a-am ... mold
Lyudochka, what is it to him, kapets !? Or maybe there is some hope? dry, fry, etc.? Maybe there are ways to destroy this mold?
I looked through all the other cans - everything is in order, only the last batch of Ivan-tea ... It's a pity very much.
Galina Iv.
Mariii, in any case, you need to remove the mold, if you dry it a little and again, and then look at its appearance, taste, etc., and tell us your experience). If everything is moldy, then throw it away. But this is my opinion ..
Mariii
Galina Iv., but how to remove it? She, straight, through all the tea, so all white. That is, I pour it out of the can and it is there everywhere. True, when I mixed it in a bowl, it seemed to disappear, worn out, or something. Only a few individual granules with a white coating are visible. I, too, think that I can remove these obviously white ones and dry them again in the oven at 50 degrees. I just don’t know how healthy it will be, and most importantly, safe tea? Or maybe with penicillin it will be even more useful
Galina Iv.
Quote: Mariii

Mold is very harmful !!!
Mariii
So you have to throw out
Olga VB
Perhaps.
Personally, I would not risk it - it's more expensive for myself.
Mariii
Well, we won't drink it anymore - that's for sure.
Throwing it away is also a pity!
I googled the Internet and decided, I'll dry it at a temperature of 120-130 (some sites say that at this temperature most types of mold die, although some say that even if the world collapses, the mold will remain), I will warm it up in the sun ( mold does not like the sun, but tea will not get any worse anyway). And then I will add it either to the planned pillows (in the form of an aromatic additive), or I'll brew and rinse in the bath. I think there will be no harm from such an application.
What do you think, girls?
Galina Iv.
Mariii, I always ruthlessly throw away everything expired in the refrigerator, treatment will cost more. Here in the bath to brew .... mold spores, getting into our lungs, can lead to serious diseases! what volume of tea are we talking about? I am ready to send you so much tea, and you throw it away
Mariii
In general, do not say so, but you should not start work in a bad mood!
When I was making this batch of tea, someone made me angry (either my husband, or my mother-in-law, or my son - I don’t remember), I only remember that I was turning it into a meat grinder and kept thinking that I was very angry. So I kicked up the tea (let's write off my inexperience for this situation). And usually I try, on the contrary, to think about the good, to say different words that are useful, in general to recharge positively.

Thank you for your concern. You don't need to send anything, of course. It's just that my husband will have to be dragged into the forest again on the weekend. I hope the fireweed hasn’t started yet.
And so be it, I'll throw it away. So that later there was no -

Just today my husband asked me when I would give him this wonderful tea to try. And I - they say, it's not time yet, wait. It's good that the first batch was successful.

Marina, Unfortunately yes ! We'll have to throw it away! You didn't dry it out! Or the jar was wet. This also happens if we pour warm tea into jars. Therefore, you need to dry the tea for a longer time in a bag in a dry place. I am in no hurry to pour it into the jar. Dry tea has a characteristic rustling sound. Now I can tell by sound whether tea is dry or not ...
Marin! This is not the worst nuisance. I also threw away the first games (I don't remember, I think, four games). True, not because of the mold, but still. So with renewed vigor they took up new parties. Also, there was no one to ask why this happened to me and what to do now ...
So don't hang your nose! Do more.

at 120 - 130 * C from your tea, especially already dried, the smell of burnt paper will remain.
Marin, in general, forget about this tea! But remember to dry the tea well. To quickly calm down, pick some leaves and make delicious tea in spite of enemies mold ... don't worry!

I already threw it away. Narwhal strawberries, wilted.
I was in a state of shock, so to speak, I was. Already let go.

That's for sure!
Marina, now make deep fermentation tea - 18 - 20 hours (if you haven't already made one)! Smell, taste, and forget about all the mold. Just think, some kind of jar! You will do it yet. And if the fireweed is already puffing, find a place near the forest. Today I went to the forest for blueberry leaves, because fireweed still does not bloom near the forest on the northern side. The leaves are young, juicy! But if you don’t find that either, then collect it from pubescent plants. Fortunately, this fluff does not really fall down onto the leaves. Last year I made 2 batches of tea from fireweed, which was already fluffed. Not a single fluff got into the tea ... The leaf, however, was rough. But the tea still turned out ...

Ludmila, thanks for the recipe! Yesterday my tea was ready, I brewed it, tried it, it turned out to be so delicious! A little later, the husband asked when the tea would be ready and when he found out that he had already drunk it, he was very surprised. He did not distinguish it from the usual black. From his lips this is the best praise for our tea, since he does not recognize others.
lappl1
Julia, I am very glad for you and your husband! The praise of our men is worth a lot! So you did everything right! So while the fireweed is not hardened and puffed up, cook more - the winter is long!
Thank you for trusting the recipe! Good luck to you !

Tomorrow I will have a day off and start the process. 1. remove from the freezer, allow to thaw 2. wind the rolls 3. lay tightly with a layer of 5-10 cm, put oppression. 6. fermentation average hours 5-6 7. first drying at 100 degrees, further reduce, then into a pillowcase .... now the question is, did I miss anything?
lappl1
londar, it's like that ! Just forgot that after fermentation, you need to cut the rolls. Try to cut thinner - about 2 mm. Or you can cut it before fermentation. I didn't do that, but Galina Iv. did. She liked more than just fermenting the rolls. In this case, the tea will settle down more densely, and fermentation will be better.
You can even after the leaves have thawed, make a slide out of them and walk along it with a rolling pin, pressing properly. Then the rolls will spin very easily. And when drying, do not forget to constantly stir the tea - from the edges of the baking sheet it dries much faster than the rest.
Good luck to you !
londar
Oh, for sure, I will immediately cut it for fermentation, and I will dry it in isidri. Thank you!!!
IvaNova
I did this yesterday
freezing - rolls - cut (though, cut half a centimeter wide, it should be already) - fermentation (about 6 hours) - drying at 100 degrees with the oven door open
in parallel, I made some young raspberry leaves according to the same scheme, but fermented for 8 hours
the smell when drying was killer
today I will dry it out at 50 degrees (it seems to me that the rolls did not reach) and put the second batch of fireweed from the freezer

by the way, the reason for the "broom" smell during the first fermentation (when granulating) was found out
there were no "brooms", it was ORZha covering me, smells (and then taste) inadequately perceived
but I won't granulate anymore, I like loose leaf tea

How do you like long fermentation tea?
Made ivan tea 20 hours of fermentation. But I can't compare, I need to brew. The smell tastes better for 7 o'clock. but he has been standing in a closed jar for a week, and this one has only been poured out of the bag. Smells more harsh.

That's right! Weakly fermented teas are more odorous than heavily fermented teas. But the long one will still be infused. And a week is not a time! They stand for years! Somehow I met infa that they found 9-year-old Ivan-tea in stocks. That was a shock for the tasters! It turned out to be the best of all teas!

figase. Directly you need to hide one jar with specials away.
lappl1
Aha! I haven't kept it for 9 years, but a 2-year-old is better than a one-year-old. Even my mom noticed it. I give her tea in Alma-Ata. Also a jar of tea was lying around. She drank everything fresh. And when I opened the old tea, I was surprised, because I did not remember that it smelled like that at the beginning.
lappl1
Girls! There is very little time left for the preparation of willow tea. Already everywhere he began to push. And the leaf became coarse. Tea, of course, turns out, but you need to collect the leaves carefully so that the seed pods do not get to the leaves. During withering, they can open and fluff from them will fall on the leaves. It is certainly not harmful. But this tea will not look very good. In the next topic, Mistletoe, I talked about these seed pods. They are located below the flowers - long (5 - 8 cm) narrow greenish-pink in the fireweed that is not yet ready to fluff and pink in the ready to fluff.
Here, in the photo, I put 2 such stems next to it.

Ivan tea (fermentation of fireweed leaves) - master class
natushka
Yesterday I found a small area with fireweed in an old felling. I typed as much as a large package, in the evening I sat sorting through the leaflets, almost all of them were nibbled by bugs, I had to work with scissors. Today I played at 4 o'clock in the morning, fermented for 11 hours, but still green, the temperature is only 20 degrees, wrapped up. What a cold summer, at night 5, in the daytime 18, the wind, we walk in storm jackets, I don't remember such a summer. Yes, I’m talking about the leaves, your castings are all intact, but it’s too long to go through.
Omela
natushka, I also have broken leaves .. I cut off. when stirring, only dry tips if possible. In the finished tea, the nibbled leaves are not felt !!! It is clear that flat and neat is better. but we don't have that, unfortunately. Therefore, it is better this way than nothing. IMHO.
Loksa
And I'll tell you more, when I went through two large packages in parts, then the first part looked very carefully at the leaves, rejected, the second part was only at the time of the newcomers and settlers of bugs, the third part: secret: already in handfuls and with one eye, the husband said: "bugs already scared and all left at once. " So we will drink first with the rest of the guests ourselves
lappl1
natushka, Omela, Loksa, I have all sorts of leaves now. Many yellowed. I try to remove them. I found a clearing right on the north side of the forest. There are young, juicy leaves, but because of the heat there are many snails (they are hiding). Can you see them all? While the leaves are drying, and I stir them up, I remove the damaged, yellowed leaves, snails. Spider bugs are rare - they run away on their own while I'm dry. And when I twist the leaves in a meat grinder, I also see snails - I remove them then. But, it happens, I hear a specific crunch when twisting (2 - 3 times for twisting). This means that the snail was there. I'm not worried - it will bake in the oven ...

Girls, thanks! I will be less picky, otherwise I threw away the third part, it still seems that the leaf has not been eaten, but on the leaf itself there were some very dark green or black dots, I also threw it away.
