In the second experiment, after 1 hour, I also opened the lid of the multicooker for 1 minute. In this case, the temperature again dropped from 61.4 to 60.8. For the same 0.6 * C.

The maximum temperature values ​​I noticed were 72.8 * C in the first case, 62.4 * C in the second. This error is explainable (Here here Masha - Osa explains very clearly why there is a range of temperatures).
Conclusion: In both cases, in an hour the multicooker reached the set temperature (with a small error of "+") and during the second hour it kept it fairly stable. The fluctuations were not significant at all, within 0.5 * C.
