Happy Christmas to all Catholics!
Well, finally, I crawled with my houses. There are a lot of pictures, I immediately apologize, I will torment you a little. I made 5 houses, 3 of which according to one template, and the 4th and 5th according to two others. Not everything worked out, but I'm glad that at least somehow I succeeded, considering that it was the first time. There are no chimneys (like we have gas in our apartment) But she put electricity into all the houses in the form of key chains. I used the dough for the houses from Gerda, and for the stands for the houses (except for the house with the deer) - according to the recipe for gingerbread dough from wheat and rye flour (the dough turns out to be lighter because it does not contain cocoa, as in Gerdin.
Well, the houses turned out to be not purely Christmas, but New Years, so there is Santa Claus, as well as a symbol of the New Year - a figurine of a white horse on the facades of the houses.
Here is my village

Tanya, I am delighted with your houses, YOUNG MAN !!! So beautiful and neat, it's a sight for sore eyes. So far, for the third day, I baked 10 baking trays all in gingerbread and that's not all, I also really want to decorate seven houses somewhere, but I have no templates, and I myself will not draw Everyone with the coming New Year.
Olesya, maybe one of my templates will work? This is the house near which there are deer, and there are two more such. All sizes are there, the windows are about 2.5 cm by 2.5 cm

Tanya everyone: mail1: THANKS !!! Do you need a lot of dough for one house?
Oh I do not know. Well, I made 5 pieces at once, and they were according to different patterns. I made 2 recipes from Gerda and 2 more kneads of wheat-rye dough for coasters for 4 houses. And then came 5 houses, stands, sleds with reindeer, and 2 pans of gingerbread.
I think that half of the recipe from Gerda should be enough (this is for such a house along with a stand), maybe the decorations will come out)
Quote: ychilka

I'm not Tanya, but I will answer. From 2 \ 3 parts of the test from Gerda, I got 3 large houses 10 \ 10 cm around the perimeter.

Tanya, it turned out very cool !!! I was confidently leading, I have a trained eye, I just mint from the sleds, I ordered felling in the Czech Republic, I'm waiting now
Thank you, Natasha, I was so afraid of this icing, I have never had anything to do with it yet, so it is clear that something happened with fright.

Quote: Lydia 777

Girlswhat are you all smart girls! Such beauty is indescribable! You just need to see it! Eye-catching!
Lida, Olya Goldy, come join us, you will still have time to make a house for the holiday. Toko is not necessary - like I can't, we try many here for the first time, the main thing is to start, then it won't come off, as it will tighten.
Quote: Lydia 777

Tanya, so I have been with you for a long time, I have already shown my worn-out yard (in comparison with yours). Today I bought a five-color keychain flashlight. I'll open the house behind a bit and insert it. And I bought a little white tray for the next time.
Just look with the keychain carefully, I almost fell completely inside right with the ring that on it, I made a too big hole.So I then attached the cap from the handle to the ring, so that it was like a stop. And then imagine a smut, if it falls inside, how to get it out of there. So it will burn for how long the battery lasts.
By the way, the keychain, if left for a long time, heats up. So you have to watch out, otherwise something will start to melt, don't turn it on for a long time.
Yes, and also, when you pick up, then do it not perpendicular to the surface, as if obliquely, like when the house is assembled, so that the hole goes more or less vertically, otherwise the keychain will not fit well, and, accordingly, it will be pulled out ...
Quote: Lydia 777

Tanya, everything is fine! There is nothing complicated there. The gingerbread is already soft, the knife has gone into butter. I carefully cut out a small square, at the very bottom of the back. She wrapped the keychain flashlight with cling film and inserted it halfway into the hole, and the button for turning on remained outside. It turns out that the flashlight just lies ... and will not run anywhere. I turned it on for a minute ... blinked and that's enough ... until next time. Flashing five colors, so beautiful, as if the tree inside the house is shining with lights!

Girls, maybe someone needs. I made reindeer and sleighs using these patterns, I found them in the Internet. Previously on a computer to the desired size increased

Girls, dear! Thank you so much for your advice, tips, and help in preparing gingerbread houses. How much warmth and kindness comes from you, as much as your hands stretch out to knead the dough. I just wanted to admire the beautiful works, but you paint in such a way, you seduce with your photos so that you can't resist. Kneading the dough, and she thought about you. I never cease to rejoice that I was so lucky to find our forum. I make houses in several stages. I can't make it in one day.

Mona1, Vei, Ksynya, Parallel, Lyuba 1955, the houses are very, very beautiful! A lovely sight!
Lyuba1955, Mona1, thanks for the patterns of houses, deer and sledges! Now I don't have to search and invent.

Tanya, cool houses, I love it when they are gingerbread, only the gingerbread itself and icing, without any bells and whistles in the form of nuts, marmalade, chocolate. Kind of like Tula gingerbread. Are blue snowflakes colored icing?
In general, you surprised me. When you have time, like a couple of hours ago on the forum unsubscribed, and then fuck bang - and houses.
Snowflakes are mastic. here you can see better.

With me on "You", Ok? I had different doughs for 3 kg of flour, but not a single house was left for myself, only a tree and a little gingerbread, I also think, can I try any other dough?
I, too, slowly distribute gingerbread, then to my friends, then my daughter to school for girlfriends. I tried Gerda's dough, very fragrant, I liked it at work. What else would Natasha advise?
Quote: N @ T @

I also made dough, which my friend gave me, I made Christmas trees from it and from rye flour, but it should last three weeks from rye flour. Some of the girls praised Larisa Volnitskaya, so she would have tried it again
Quote: Parallel

the dough is just great! aromatic and tasty. I only give cloves there a lot less - not 2 tsp, but a pinch, for me cloves are a very strong spice. and another 40 grams of flour I replace with cocoa - I like how the icing looks against the dark background of the house.

Tanya, where did you "dig up" such painted apples ?! People came up with it ... There, by chance, it was not written - are these icing patterns?
Well, yes, this is the usual icing. Here are the details of the technique

Girls put the gingerbread cookies in a container to ripen. I didn't paint with icing yet.
Guests (children, grandchildren) come for all the holidays, so before Christmas we will paint together. I hope everyone will be interested.
Gingerbread house (how to assemble and decorate)
Quote: Mona1

Galya, deer and sleighs, I see, also did it. You know, I cut them out like you, the halves of the sleigh - in a mirror image, and I also circled one of the deer, then I turned over the paper-pattern and circled the second. So, then, when I began to paint them, I realized that the deer did not have to be made in a mirror, they should look in one direction with their muzzles in the harness, I had to turn one deer so that the wrong side was in front of the view, and it was already painted (though , before that she painted everything from her face, she was so happy, and then I realized that the muzzle of this deer was looking in the wrong direction). True, I put this deer in the background.
I don’t know, I wrote it chaotically, maybe it’s not clear.
Tanya, wrote everything clearly! Sleds and reindeer immediately sunk into my soul, such a beauty. The patterns were handy.
You know, I figured out about the deer when all the dough was over. Maybe I'll put one olezhka separately. To be honest, I am generally very glad that I baked gingerbread, I thought I would not find time.
Quote: Mona1

Just paint from the inside out and put it behind the first, it will be imperceptible. And then in a team it is more beautiful with two deer, when one is a little ahead of the other.
And my gingerbread is something hard yet. A week has already passed. And the girls, the students will come to me on Monday, after the lesson I will give them gingerbread, icing, and show them how to draw. There are 6 girls, third-graders. And let these gingerbreads take home. so I worry that suddenly they are so firm and will remain, disgraced in front of their parents.

Here is my shit from two houses.

Ising squeezed out of a paper cornet. I dried it separately on the windows and glued it to icing.

I've just baked three more houses, gifts for NG, I'll decorate tomorrow. And today I was both an architect and a builder, tomorrow - a decorator))))
Vei, Prus - 2 , THANK YOU!
During the manufacture, I encountered some difficulties: the dough was not kneaded steep (there is less flour than in the recipe) and the details, when transferred from the working surface to the baking sheet, led a little, because of this, the exact connection did not work. I tried to rub the distorted joints with a fine grater, in order to more accurately fit each other, but I broke a couple of walls, I had to glue them.
I experimented with cutting dough from an already baked, hot layer, but the dough cools faster than I cut it, so I gave up this idea.

All the same, it's great to make houses for the holiday and a lot of everything that is time consuming and tasty! I do not wrap my gingerbread in anything because it is first of all a festive decoration, and then a treat. Many of those to whom I gave gingerbreads and do not dare to eat them, keep them for years. This is their choice. And we gradually eat everything at home - next year there will be an incentive to create something new!

Alena, very nice houses and gingerbread!
I, too, slightly "led" the details when baking, maybe due to the fact that they smeared with an egg? She fastened it with chocolate, like Lyuba, but until it froze, she chopped off the pieces with pins. In the morning everything was like cement. My daughter decided to collect one of the houses for caramel. After 2-3 weeks, caramel began to drip, and when they wanted to give this house, they could not move it, it stuck and practically collapsed ...
Gingerbread from this dough turns out to be tough, but when you take a bite, they melt in your mouth, however, they bite quite easily too.

So the harmony of taste is preserved), which I covered with mastic masonry). This is a rectangle 21 x 21 cm and a height of 12 cm. True, on top, I also laid a biscuit cake 3 cm high (to the base of the windows) for the reliability of the structure and surface in order to install the lighting device.

This is the view.
Gingerbread house (how to assemble and decorate)

Then I also covered the surface with a very thin layer of mastic. Lubricating the edges with protein and on top "planted" the second floor - a gingerbread house. It was already prepared, but without a roof. Then I inserted the tree and arranged the shapes, gluing them with squirrel.
That's the whole technology. The construction is very stable. It was transported to the other end of the city without any problems.

Gingerbread is there a tree in the house? Well this is generally
Quote: Merri

Gingerbread, well, it's all gingerbread Gingerbread! Someone is lucky !!!
In the house there is not only a Christmas tree, but also Santa Claus and Snegurochka next to it. If you look through the windows of the house, when the lights are on there, you can see that a fairy tale is being performed in the house.

N @ T @, love-apple, Vei, Luciole, Hotice-1, Lyuba1955, Mona1 Thank you very much for appreciating my humble architectural work. And I will be very glad if I somehow suggested some ideas, some fantasies. Made a gingerbread house for the first time. Honestly, the most difficult thing for me was working with icing: it was difficult to guess the consistency, so that the "snow" seemed more natural (on the one hand), and on the other hand, so that the icicles were obtained. For such a large house, I baked small pieces and connected the walls with them (look at the photo - you can see it there). At the same time, the structure was more durable and it was easier for me. And one more thing: in order for the product to keep the shape exactly the one I asked for it, I did not put any ripper or soda in the dough.

In my very first houses (2011) there were windows from "Barberry", I read about this method in the cook, crush caramel, fall asleep in the window and at a low temperature (at which, sorry, I don’t remember), hold it in the oven until it melted completely. My windows did not melt, my houses stood for 10 days and nothing melted, then I gave them to my loved ones and they did not melt, then they were successfully eaten))) I’ll show them to you now, just stop laughing, I had no idea then, how it's done

Natalia, thanks for the advice! I melted the candies as soon as I baked the houses. Now I will try at low temperatures. Maybe the whole trick is just this!
Py: SY: and the houses are wonderful! On the contrary, let people see that it is not the gods who burn the pots, and what can be learned! Let me also boast of my little house. For the first time I made both the house itself and the gingerbread dough in general. The child asked for Christmas, could not refuse ... The little hands, of course, were shaking, so it turned out crooked, but she herself was happy with the result. It was interesting to do. And the gingerbread itself turned out to be surprisingly tasty. Children do not eat purchased gingerbread at all, but this one was crushed for a sweet soul. I took the recipe from a textbook for pastry chefs, almost in accordance with GOST. The house turned out to be quite large: about 23 cm by 28 cm and 30 cm in height.

Akimell, a great house turned out, but about the recipe for the dough I would like to learn more about the taste. I see the walls are thick enough, is it soft? I here got hooked on different gingerbread (to make) and collect recipes, especially for the gingerbread board.
Quote: Lydia 777

Akimell, Elena, a beautiful house turned out! I am also interested in the recipe!
N @ T @, Natalia, here some of the girls gave a link to a site where there are a lot of recipes for gingerbread, and a lot of useful things. I'll try to throw links 🔗 and here 🔗 In general, there are many pages here.

Lena, a very pretty house, big and neat!

Girls, and I have already run out of gingerbread, but there were two huge pans! My family began to quietly pick either a Christmas tree or a bunny near our house, but today I look, there are no deer, and the sled is standing. But how delicious it is this dough from Gerda!
Quote: Lydia 777

Tanya, come to me, next to me! I have to eat the gingerbread alone. Children live in another country, my husband does not eat sweets. Yesterday I was breaking the house, creaking my soul. I put it in a plastic bag, and sent more than half of it to the freezer. I began to cut the stand for the house piece by piece a long time ago. Yes, indeed, the dough from Gerda is just awesome! I also made another dough (from rye flour), baked different figures, I did not like these gingerbread cookies. And it's a shame to treat them like that. I'll put it in the freezer too, maybe whenever I want.
Quote: Mona1

Lidochka, countrywoman,
Was there only rye flour? I also made dough, but it was rye and wheat in half, I made coasters for houses from it. So I haven't tried it yet, I don't know how it tasted.
Quote: Lydia 777

Tanya, there was a recipe that you can put 50x50 wheat and rye flour, and in the reviews one madam wrote that she and her mother put only rye flour, so they say it's tastier, well, I listened. In general, she ate, but without any pleasure. Maybe 50x50 different flour will be tastier, then you will tell. But in any case, I will never bake gingerbread from such a dough. Only from Gerda! May God grant her health! And I am very grateful to Lyubochka (Plus-2) for the inspiration and the recipe tip!
Quote: Mona1

I just looked at my recipe, it turns out, not even 50/50, but 2 times more wheat, but there is no cocoa in the dough, as in Gerdin, so I wonder what it tasted like. It is much lighter in color, and due to the lack of cocoa. Here is the prescription amount:
Wheat flour of the highest grade - 240g.
Peeled rye flour - 120g.
Honey - 150g.
Sugar - 150g.
Yolks - 2 pcs
Butter - 50 g
Soda - 0.5 tsp.
Vanillin
Ground ginger -1 tsp.
Cardamom, anise, fennel, coriander, cumin, cloves, cinnamon - a little bit each (I put these, and who likes what spices)
When mixing, I used HP.
1. Heat honey, sugar and butter in a water bath until sugar dissolves. Remove from the bath and cool slightly (but not lower than 70 degrees). Add flavoring. Mix.
2. Mix a glass of wheat flour with spices, pour into the honey-oil mixture, stir thoroughly so that there are no lumps. Cool slightly.
3. Beat the egg yolks. Pour the yolks into the honey mixture cooled to a warm state, grind.
4. Mix rye flour with the remaining wheat flour and soda, then pour a third of this amount into the CP.
5. Pour the egg mixture on top of the flour in a bucket of HP.
6. Turn on the Dough mode (I included Pizza in my Panasonic). When mixed until smooth, start pouring in the remaining 2/3 of the mixture. The kneading took about 10 minutes. When we got a good kolobok, turn it off.
7. The dough should be non-sticky, plastic, dense.
8. Further, in the original recipe, for some reason the dough does not lie off, but it is immediately rolled out, maybe they just did not indicate this, thinking that this should be clear anyway, although for a teapot like me it is not clear at all.
In any case, I sent him to the refrigerator for a day (even 1.5 days left)
9. Roll out the dough on a floured table to a thickness of 0.5-0.7 cm, cut out the blanks for the gingerbread house according to the template. Transfer the workpieces to a baking sheet, spread them out at a distance of at least 2 cm from each other.
10. Bake gingerbread pieces at a temperature of + 220 ° С for about 8 minutes; make sure not to burn.
11. Cool the baked details of the gingerbread house. They can be stored for several days in a closed cardboard box at room temperature until the house is assembled.
Quote: Lydia 777

No, Tanya, I have a different recipe (so don't worry!). Here's a link https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=330014.0 (I remembered - you can make a hyperlink here).

I also made these gingerbread cookies, 100% on rye flour and lard, but I made big gingerbread cookies with jam - well, I really liked them, but trimming without jam is not at all the same
Quote: Lydia 777

Well, that means that this is my mistake, I had to do it with jam. And I painted with glaze. And I have dough and butter. Thank you, Natasha, for resolving the issue. Maybe some of the girls would like to make gingerbread cookies from such a dough, but here I charmed him.
Quote: N @ T @

Lydia 777
Lida, I read the entire branch there, I asked around for the girls and realized that they needed to be made large like those in Tula, I just ordered the gingerbread boards from Alisa, and they turned out to be big, one gingerbread with 2 parts and jam hung 300g. I also realized that you need not to overexpose in the oven, otherwise they will be harsh, those that I baked correctly - soft, straight melting turned out. Everyone I gave to try - everyone liked it
Quote: Lydia 777

Natasha, I did not make gingerbread too small, from 10 to 15 cm in diameter. And I didn't make thin ones, from 0.8 to 10 cm of raw dough. I didn't bake it in the oven, they are soft, crumbly, yes, melting, but I did not like the taste itself. Maybe, really, it would be much tastier with jam, I agree. I made the dough for 1 portion, that is, for 1 kg of flour. I didn't bake everything right away, and there were so many. And baked the second half on the 8th, they lie in a box, I don't even want to decorate.Idea! I’ll send my husband to the cellar for some jam. I will cover them with jam, see what happens, what they taste like. I will report tomorrow
Thank you for your kind words .
Yes, the gingerbread is pretty soft. I rolled it to about 0.8 cm. It rose twice in the oven. It tastes pleasant, gingerbread ... And most importantly - not sticky: you know, as sometimes happens - when chewed, gingerbread sticks to the palate so that it is difficult to swallow. Mine can't stand it. And everyone liked this gingerbread. But here, as they say, the taste and color ...

Recipe:
Flour 1 grade - 750 gr.,
Flour in. from. - 250 gr.,
Honey - 300 gr.,
Brown sugar - 300 gr.,
Water - 230 gr.,
Eggs - 2 pcs.,
Butter - 100 gr.,
Salt - 5 gr.,
Soda - 15 gr.,
Lemon to-that - 2 gr.,
Dry spices: cinnamon - 1.5 tsp, cloves - 3 buds, black and allspice - 3 peas each, ground ginger - 0.3 tsp, cardamom - on the tip of a knife.

The mixture of spices was according to the textbook (in percent): cinnamon - 60%, cloves - 12%, allspice - 12, black pepper - 4, cardamom - 4, ginger - 8%.

Mixed all dry ingredients. Dissolved sugar and honey in water. I didn't heat it up much - as soon as everything melted, I turned it off. While I was mixing everything dry, the syrup was almost cold. I drove eggs and heavily softened butter into the syrup, and blurted it out. Little by little I added to the flour mixture and kneaded. Covered with foil and left for a day.

That's how it is. In the recipe, I deviated slightly from what was in the tutorial. If anyone is interested in the original, please contact us.

Girls, as promised, I will report. I covered the gingerbread cookies with plum jam from the back and folded them in two, well, that there were 2 hearts, 2 snowflakes, 2 houses, 2 large clouds. I crushed it with a load, they stayed with me for the night. Today, I slightly smeared it with jam on top, left it to dry open. Then scribbled decorated (if I may say so) with glaze. The jam shines, it turned out so glossy. I've already tried it. Of course, the taste has changed. The jam gave a certain sourness. In general, you can eat, but I would not dare to treat someone

My house stood for the holidays and now we are slowly eating it. While they were cutting off and eating the stand, the fences, everything was fine, but today they cut the house itself (a piece for my grandmother to take with her, and so drink tea) I immediately received a "hat" from my son. Nu-nu, mom! and almost with tears threw something at me and was offended. Although he himself had nibbled the corners, icicles, beads on it before. Well, we agreed with him for a new house.
Quote: MamaMaxa

This is a very exciting activity! Let it be a good New Year's tradition: make gingerbread houses with the children!
I baked without him, it's impossible with him, if it helps, then it's enough to play with your piece of dough for a couple of minutes, and when decorating, all the beads and sprinkles and cream immediately fly into your mouth. I will deal with the cakes and knead the dough, make 2 smaller houses.

Today I decided to post and show, but after SUCH beauty my houses
But all the same I will lay them out, though I am not a decorator, and I was in a hurry with their "decoration", and my daughter also "helped" me. I used to draw with a file with a cut off tip, so there could not even be any thin lines on my houses. But I made them !!!!!

And here is the second house from different sides.

Gingerbread house (how to assemble and decorate)
The first house went to his mother to wait for his finest hour, the niece walks around him every day and says, "When are we going to eat today?"
And I decided to leave the second at home, it is also packed in cellophane.

Only when it was baked - some gingerbread cookies (from the remaining dough) turned out to be tough, and some are soft enough that you can still eat them now. And the houses are both hard

P.S. dough made gingerbread from Gerda

Quote: Vei

nik-irina,
It is inconvenient to use a confectionery syringe, or a cornet made of baking paper, or confectionery disposable plastic bags (you cut off a corner and that's it), but ideally buy nozzles for them. Round sizes 0, 1, 2, 3. The most popular are 0 and 1. The pros still have 000, 00. But they are very thin, there is a powder, like starch dust, otherwise it will clog up.
Vei, but I didn’t know that it would be uncomfortable for them, thanks for prompting me.
I will then look for disposable + attachments
Quote: Vei

Ir, proceed from the fact that for a smooth and even line, even pressing and pressure on the container with icing is necessary. The thinner and more pliable it is (capacity), the easier it is to control the pressure and, accordingly, draw the pattern line. By the way, once again about grinding the powder, until I bought an expensive French one, I didn’t feel the beauty of the process and the result. With her, the lines are wonderful, and the fill is smooth, smooth, like glass, and even with a mother-of-pearl overflow. In general, sheer pleasure.
Watch the video of the famous American Julia M Usher on YouTube. It shows how to twist cornets, how to make Aising, and how to apply a fill from it, and then the basic techniques of "extrusion". She has a lot of very cool lessons and ideas too. I can't stop now)))

I looked through the whole topic from the first page.Such beauty is fabulous, there are simply no words. This year I also kneaded the dough, baked the blanks, but did not have time to decorate. Mine were all smashed, they said it was delicious without decoration. I have a problem with this, how they smell the smell of baking, they immediately flock like bees, and nothing can drive them away, all my plans are ruined.
And I baked this house 3 years ago, I will give it as a gift. He dreamed of buying a large country house, so for his birthday he was given such a house.
Dream House.
Gingerbread house (how to assemble and decorate)
I first assembled the house, and then drew windows on it, so we got such curves. Now I would have done differently.
I'd like to try again to make a house, just need to figure out where to send my family for this time.

Selen,
Come on, Lena, join in! It is very interesting and exciting!
And your house is pretty, but what is the lawn with the herringbone made of?
Lawn and Christmas trees made of marmalade. It's soooo sticky, I'm trying to stick it on the gingerbread, but it sticks on my fingers and on the knife. I didn't have enough patience to plant more lawn, that's why it's so short.
