First I'll show you my second and third houses, then I'll tell you from what and how.
Gingerbread house (how to assemble and decorate)
Gingerbread house (how to assemble and decorate)

My usual dough, gingerbread - honey, sugar, egg, flour, spices, soda. Normal icing. This is the White House. Red - lacquered walls, roof under protein filling. The white house went because the glaze was liquid ((((but the red one, according to the advice from here, glued it - first the protein with lemon juice to the peaks, and then mix the powder there with a spoon and a mixer at a minimum speed until smooth. Covers quickly, keeps its shape, after about ten minutes I put the roof on and after 20-25 transferred it to the base.

I will add, the house - the walls, covered with chocolate with a hard brush on several layers, the roof - Hungarian glaze, the fence - chocolate, the grandfather and the snowman, a waffle picture, a tree with a cut-down flower, chocolate hemispheres under the snow drifts, small Christmas trees and decor - chocolate, windows made of purchased caramel like this 🔗

Pluss, cool! And what details do you have? It seems not asterisks. Are Santa Claus and a snowman real or professional?

And I finally finished mine.
I promised drawings, but I won't post it, then I remembered that I had screwed up with the roof, I had to saw off a lot. And in general, I did a lot of rework in the process. I planned to put a substrate on the house under the roof, but when I started doing it, I didn't like it, I did it without it. It turned out that the front and rear roof slopes are on the walls, and the end ones hang, without a lower support.

DaNiSa, well, it is relatively two-story, did not risk it and made it from solid panels, according to the principle of one-story.

Taranolka, large-scale work! And how is it that such huge walls and roof have not sagged anywhere! Everything is smooth.
Alena2007, he's sooooo hard. I originally did not make it for food, but if you knock on it, if you knock on it, the sound is like on plywood
I found another photo of the process, the roof exhausted me a lot.

Taranolka, this is yeah !!! And I don’t get such roofs How many times I’ve done it right from the patterns, but they don’t adapt in any way.One house had to drink the upper part adjacent to the large roof, and then I look at the finished house - and there the coffin was stuck on the side as if. And laughter, and sin ... That's how the house stands, I don't sell it.

For the second day, I sculpt large structures by my own standards. The weight of the stone house is 2300g, the red one is 2700g.

for the future, make a stand, preferably also made of gingerbread, so the composition looks more complete, professional and richer.
And if you don't plan a lot of "snowy" icing decor, then glue the house not with white icing, but with colored ones in the color of the walls, so it will be more accurate.
I would add something else here: either white decor (snowflakes, etc.), or colored (I would throw garlands with colored lights or colored serpentine on the walls). And then the walls are empty, something is missing. Well, that's for my taste. It's just that you have such a wonderful neat house that you involuntarily begin to speculate about it. Bad work doesn't inspire hints))
Vei, I didn't want to overload it, I thought about snowflakes, but I was afraid to draw them clumsily. And there will be a stand, there was not enough dough
Thanks for the comments.

Oh what new interesting houses! I like! Brought another house for consideration. There are many sins, I can see it myself. But I like to do, I will still and not yet bring it to an excellent performance. I can't get icicles out of icing, well, in any way, at first they stretch with some kind of snot (sorry), and then they break off and that's it.
Gingerbread house (how to assemble and decorate)
Quote: DaNiSa

Angelina Pryanikova, beautifully designed! in such tones it looks very advantageous at the expense of icicles - can you make them too thin? Well, in the sense why are they under their own weight and at the same time fragility break, or are they too long?

SO! WHERE AT LEAST THE APPROXIMATE DIMENSIONS OF THE HOUSE, AND ALSO FROM WHAT TEST THE HOUSE IS MADE!
Alena, well, I already wrote the dough, I didn't take it from this forum. What should I call him?
100 grams of sugar
50 grams of honey
1 egg
Spices (about a teaspoon), orange peel.
Heat to dissolve sugar, do not boil.
Then there is 0.5 tsp. soda, stir while rising. Then pour in 50 gr. butter. Interfere. And flour - 250-300 gr, I add it by eye until it is soft and does not stick to my hands. And in the refrigerator. On the trail. day you can bake. 180 degrees 9-11 minutes.
House dimensions -10 * 15 * 15 cm, purchased molds

Girls, please tell me, I will have a biscuit house, but I want to decorate it like gingerbread in this style, do you think it is possible to make snow and icicles from wet meringue and not from icing?
Quote: DaNiSa

Why not? I think you can, will you store it in the refrigerator or what? Is it still a cake or just a house?
from a wet meringue, I twisted cones for roses and they dried out at room temperature and lay for many days. and nothing happened to them
DaNiSa, it will be a composition of houses, Christmas trees, snowmen, etc. I just have a prejudice to icing because of raw eggs, I also think that MB will do, roses are twisted from it, really icicles won't work.
Alexandra Sergeevna
Good evening everyone! Today I baked the details of the future house according to Gerda's recipe. I will collect it tomorrow. Now I tried on the parts to each other, and it seemed to me that they were damp, moist in the middle (I baked for 8-9 minutes at a temperature of 170 degrees), for some reason it seems to me that the parts will break during assembly. I am making a house for the first time, and I do not know - it should be so or is it my imperfection? Maybe I didn't finish them? Please tell me what can be done in this case ...
Quote: DaNiSa

Alexandra, if they are wet, it means that it is definitely not baked, in general the gingerbread cookies from this dough are very dry and hard, they should not be very soft. can dry them in the oven?
Quote: Kolobashka

I did it like that once, to crackers. Well they seemed damp. So watch your eyes.
Viya
Hello gingerbread fairies!
Let me ask three questions to all knowledgeable and experienced, please advise:
1) What do you put or what do you lubricate the baking sheet with when you melt the candy caramel in the windows of the gingerbread houses? I grease baking paper grows. oil and still the windows stick and the paper has to be soaked with water.
2) Is it necessary to glaze all the parts of the gingerbread near the house from the "seamy" side and the clearing-stand including, so that the gingerbread does not dry out in 2 months of standing and admiring. Or we decorate the front sides with painting, and the wrong sides remain, as after baking ...?
3) And in the end, how to revive this delicious gingerbread house for use after aging for 2-3 months so that everyone's teeth remain intact?
I baked blanks for the first small house according to Gerda's recipe, decorated them, and now I will collect them.
Waiting for answers, tips, recommendations :) Thank you.
Quote: Valentine

Viya, I made my first house with candies in the windows. I did not smear the paper with anything and did not pour flour. when the gingerbreads cooled down everything went well. it seems to me that it depends on the quality of the paper. I was making gingerbread the other day and bought cheaper paper, which I regretted a hundred times. because I barely tore off the gingerbread. I only smeared the glaze on the front side for a beautiful shine. on the 5th day my house was eaten, but I read that you need to cut the apple into slices and together with the house in a bag for a couple of hours it will become soft. in short, you need moisture because in a month it will dry out.

Girls, thanks for the inspiration and your advice!

Gingerbread house (how to assemble and decorate)

This is my first house. Made together with my daughter (6.5 years old) for a New Year's exhibition in a kindergarten. Everything is in a hurry, because the youngest child often woke up exactly when we needed to "build" the house. My daughter helped me measure the food, roll out the dough, cut out the parts herself. It was very convenient to assemble the house with her. She held the parts, and I looked to see if there were any irregularities in the parts at the joints. Then my daughter covered the details with icing, she made the roof from icing and pillows. All this was conceived to spend joint leisure time for a favorite pastime.

The dough was made according to Gerda's recipe. For some reason, it took less flour, but the dough blurred a little when baking. I took the pattern from the site 🔗

The dimensions of the house are 13 * 7.5 cm, the height with the roof is 11.5 cm.The stand is 25 cm in diameter.

I cut the details with a knife and grinded them down with a grater. Ising did according to clear instructions from Elizabeth Vei prescription from Eddie Spence. Aisinga made 38 grams of crude protein. It was enough for minimal decorations.

Yes, this house with a stand took half of the dough according to Gerda's recipe.
Quote: Vei

Katya, it's a great house. My whole hobby for gingerbread and then cakes also began with a house for an exhibition in a kindergarten))) Now this is my favorite job.
I think that it would be possible to decorate the house with something else colored: marmalade, M & Ms, just colored sprinkles from the supermarket, candies. In general, something that would add color and celebration. My daughter and I sprinkled that very first house with colored sugar balls, decorated with gel crayons, and the roof also with a red ribbon.
Vei,
Elizabeth, thank you! I bought different sprinkles, but my husband said that the two colors match very well and it turned out very stylish. We decided that we would decorate the house brighter, and add Christmas trees, snowmen.

Husky,
Lyudmila, I made icing according to the recipe given by Elizabeth Vei by this link
https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=178044.0
With this icing, I glued the parts right after its preparation. I smeared the wall of the house well and pressed it tightly against the other wall. In this thread, I read advice to prick carnations with tailor's pins and leave them until morning. The pins were not useful to me. Everything was holding up so well.

Husky, Luda, did icing according to the same recipe, squeezed out the strip and glued it, propped it with glasses on the sides. let it stand for 2 hours, then glued the roof, put a bowl under it, otherwise I strove to leave

Girls, thanks. That is, we make a basic recipe and use it to connect the details of the house. Isn't it necessary to thicken icing more?

It's just thanks to you that I decided and probably discovered my talent.
And I want to take into account my mistakes! They are still there! It seems to me that the mesh on the embroidery is not very even. And you probably need to fill it with dots more fully.

And in turquoise it seems to me a little roughly turned out monograms - they ask for thinner.
And one more conclusion made that such gingerbread decorations should be made and given to those who really expect and want it, because not everyone shares such a passion
Quote: pssaha

JuliAnna81, Julia, the houses are very beautiful!)) Tell the truth, what did you fill your hand on?))
Quote: tuskarora

Houses are awful! Simply amazing!
I only made about 50 cookies and that's it. All sorts of curls for cakes a little bit ...
It was problematic for me to feel the right icing consistency. Well, it's still not very convenient for me to work from the cornet - the hole does not come out of a round shape when cut, and it gets tousled ((and I still have not all the numbers ...
You should have seen my last year's "list" of cookies - a disgrace

And also, don't fall for my mistake!
I made a hole in the roof by dividing the distance incorrectly. As a result, all roof halves were made according to the same wrong template. And when I folded them in a mirror, I got a displacement of the holes relative to each other. Fortunately, there was a margin in the width of the roof for the cut ... in general, I got screwed up with the roofs
Conclusion - measure seven times !!!

Gingerbread house (how to assemble and decorate) Gingerbread house (how to assemble and decorate)

The Mazeshkalach dough, I love it dearly and I planted all my friends, a wonderful recipe, the whole composition took one and a half servings, icing according to Eddie Spence, a whole portion left and another 1/3, tinted with gel dyes. The size of the house is about 13 * 17 * 19, the wall and the substrate are about A4, a little larger, I tried to fit them well into the candy box.
Now about the mistakes, suddenly someone smart and experienced will tell you how to avoid this:
1. The largest parts (stand and wall) went in bubbles during baking, while the smaller parts came out very well, and even, and smooth, and fluffy.
2. After decorating the wall, not letting it dry, she began to transfer it to another place, so the sky turned out to be a crack, but here it is her own fault, she did not take into account that the gingerbread is soft, and there is nothing to blame on the mirror if there are not enough brains.
3. With icing, too, not everything is as it should, the basic one seemed to be good, but by the end of the decoration it stopped holding its shape, it blurred a little.
Tell me how to avoid all this? Well, if you indicate other errors, I will be very grateful!

Blimey! gingerbread with a 3D picture! smart girl!
about your mistakes
most likely the dough is unevenly mixed, on large parts such flaws and pop out in the form of bubbles
did you decorate for a long time? if everything is in one day and still blurred, then icing is most likely not finished

Decorated in one day, somewhere from lunch and watch until nine in the evening, probably, I really did not finish it off, I will carefully monitor this.

I will take into account, I will try to knead better.
Thank you so much for your advice!

Maria, the idea with a 3d picture is cool !! I myself recently made a cake with a backdrop-picture of gelatin mastic, but I would never have guessed with a gingerbread! My fantasy is generally tight
But at the expense of icing - I had it for almost a week while I used it all and, of course, it changed. And if it was spreading on the same day, then either the base one was not finished off or it was diluted too much, if it was diluted ... it also changes slightly from the warmth of the hands. The last time I made the base one thicker, and for drawing I put it off and brought it to the desired consistency. It used to be like I looked, everything came out right on the test, I filled in the cornet, I started to draw, and it blurred a little. Then I put it back into the bowl and added the base one. In general, this subtle moment has not yet been worked out to perfection for me, but perhaps you will get such infa
JuliAnna81, Yulia, thanks for the comment! My imagination is also tight, I carry all ideas for a very long time, I spy on the Internet a lot, so I shared. And for the advice on icing, thanks, I have very little experience in this matter.

suvoyka, Maria, Very unusual!! The idea is great !! There are disadvantages. Apparently, from the fact that the plates led the drawing made by icing also walks. It's a shame that not all photos are enlarged. Those shown on the side are difficult to see. But the idea is great. As for bloating, the girls have already discussed this issue. Look HERE
On the second question, you yourself wrote everything correctly. There is no need to rush, you need to let the icing dry well. Especially if large areas.
3. Icing must be constantly mixed. And if it becomes a little softer, then I just add a little powder and mix in icing.

Husky, Ludmila, thanks, for the comment and the link, I will try to dust with flour. I wrote down about icing, I read that you need to mix it up periodically, but as soon as it came down to it I forgot everything. And the drawing walks both from irregularities, and from my lack of experience, I dabble in gingerbread a couple of times a year, always for Christmas, well, sometimes I do it for close friends, this cannot even be called an attempt to learn, just pampering for the joy of my family, of course , I want it to be smoother and more accurate, but there is absolutely not enough time for improvement.

JuliAnna81, Yulia, great job !! Very neat. I just can't believe that these are the first works of such complexity. I liked the shape of the houses very much. If possible, write down the dimensions of the parts. And if there is a drawing, then it will generally be just a gift for all of us. I looked at your work for a long time and the only thing I noticed was that the hand was not yet full and therefore the straight lines (drawing of windows, doors) were not so clear. But all the rest of the work smooths out these shortcomings. Keep it up!!!!

Piano, Elena, a great job has been done! I wonder how long this work takes?

Cixlida, Natasha, the house with the "light on" looks very nice. How did you make the windows?
I didn't fill the windows with anything this year. Lazy.

DaNiSa, Alena, thank you) I could not even imagine how the painting of the gingerbread, and especially the houses, drags on. I began to use them as decoration on a cake, here is the first one:

Husky, Luda, thanks) As you can see, I am using your Christmas tree master class to the fullest)
Inside the house there is a candle - a tablet in an aluminum case. This year I made gingerbreads and houses for the first time, I'm interested in everything) I bought small candies in Lenta, split some of them, and put some whole and baked all together on parchment Paklan, it does not stick to it. There is no difference between whole and broken candies when baking. Lollipops of different colors behaved differently, for example, the yellow bubbled, and the red just spread gently. And yet - it is better to make windows on both sides, in the first house I have only on the facade, with a lit candle there is little beauty)

Natasha, thanks for the caramel tips.
This year I also made three New Year's cakes with houses and gingerbread decorations. They sent me a photo and asked to do something similar. I asked the customer, what if I make all the decorations from gingerbread? She agreed. Imagine, I received gratitude from her on the same day, as soon as the cake got to her house. I called and said that I was terribly happy. And her sister sent poetry as a token of gratitude. So nice !! I made them two identical cakes. It was their desire. Only the houses were painted a little differently. These are the two cakes.

And I made another cake for my niece. This one was done in brown.

Gingerbread house (how to assemble and decorate)

I took all the drawings for painting the roofs from the forum, from Natasha Nansy. For which many thanks to her !!
In general, now making cakes and gingerbreads is not the main thing in my life, but you can say so by the residual principle. Grandson, home and then work. Therefore, there is a sorely lack of time for reflection and implementation. Therefore, the houses without illumination (the candles did not fit into the prepared holes, there are no candy windows, and in addition to everything the LEDs purchased for such purposes and specially removed to remember where they lie, I never found) Well, what we have, we have ...
Actually why am I writing all this. This time when I was making houses, I wanted to make them in the form of birdhouses. That is, their shape is in the form of a trapezoid.
I tried to find patterns on the Internet. Did not work out. Strange, I thought that what is what, but this "good" in the network is full, "like shoe polish". Maybe again, due to lack of time, I could not find such drawings.
It seemed to me that there was nothing complicated, and with the help of a drawing of one panel, I would cope with such a house.
oh I was cruelly mistaken.
The first two houses, the ones for the two sisters, were completely ruined due to the incorrect calculation of the roof length. Ate-ate brought the roof to the ends of the walls. There could be no talk of any icicles. They simply had no place to hang from.
For the other two houses I decided to make a full-fledged pattern, taking into account all the mistakes of the previous time.
Yes Yes!!!
Again, I was cruelly mistaken.
The roof was barely long enough for me. The truth is already without such tension, cutting and tightening parts. Just back to back.
I still had to sit down and strain my little head (but there’s no time to think at all) And try to figure out why I didn’t have enough allowances for the roof again. I gave them 1 cm on each side?
Everything turned out to be very simple.
Since the shape of our trapezoid is wider at the top than at the bottom, then the calculation of the roof had to be done based on the width of the top + 2 cm for the allowance.
I did it based on the width of the bottom of the house parts. Here !!!
I will expose here a drawing of my last house, but taking into account ALL my mistakes.

Gingerbread house (how to assemble and decorate)

Please note that the floor is smaller than the walls by 0.5 cm on each side.
Also, the side walls are smaller than the front and back by 0.5 cm on each side. This is so that the joint (seam) is on the side, and in the front it is clean, if it is not possible to connect the walls neatly.
Hope my building efforts New Year's mansion drawing, useful to those who also have little time to think over the details !! : girl_wink forgot to write that she made gingerbread from Lera Sahara's dough. She rolled out thinly 2-3 mm. After lifting, it was about 5mm. On average, a house with this size weighs 240g.
Installed on a cake with a diameter of 28 cm.
