Airy pie with curd filling

Butter 100 gr
Sugar 1.5 tbsp
Sour cream 100 gr
Soda ½ tsp.
Vinegar for extinguishing soda 1 tsp.
Flour 2 tbsp

This cake is hardly a cake. It reminds me of a cake even more. And it prepares much faster!
I prepared this recipe literally an hour before going to visit my grandmother, whom I decided to surprise.
So that you understand how quickly everything is done, I will say that my husband managed to run to the store for sugar. And all this in just 1 hour.
By the time we arrived at my grandmother's, the cake was still hot.
All of our people appreciated its taste.
Cake preparation:
1. Melt the butter and cool slightly, or take softened and put in a bowl.
2. Pour in 100 gr. sugar, a pinch of salt, put 100 gr. sour cream.
3. Quench the baking soda with vinegar and put in the dough, you can also use baking powder (1 tsp).
4. Add 2 cups flour, knead the dough. It turns out to be quite elastic.
5. Put baking paper on a large baking sheet, then roll out the dough about 7 mm thick on it.
6. Place the baking sheet in the oven over medium heat and bake for 20 minutes until the crust is golden brown.
Cooking curd filling:
1. Put cottage cheese in a bowl, mash with a fork.
2. Add 100 gr. sugar (1/2 cup) and vanillin, mix everything thoroughly.
3. Carefully separate the whites from the yolks, add the yolks to the curd mass.
4. Gently mix everything.
The more tender the cottage cheese and the less grains it has, the tastier the filling will turn out.
Protein cream preparation:
1. Beat 5 proteins with a mixer until a thick foam, adding a little citric acid for better whipping (literally at the tip of a knife).
2. Continuing to beat, gradually add 100 g to the whites. Sahara.
You will get a homogeneous thick protein mass.
After you have taken the cake out of the oven, immediately spread the curd filling on it, carefully distribute it over the entire area of ​​the cake.
Put the protein cream on top of the curd, also gently distribute it over the entire area.
Place the pie in the oven over medium heat for 10-15 minutes, until the squirrels are slightly darker.
Advice:
In order for the whites to whisk better, I recommend chilling them before whipping.
For a little, it is enough to draw continuous wavy lines from one end to the other along the upper protein layer with a fork over the entire area of ​​the cake.
The pie can also be baked in a split form - then it will look like a cake, but for this it is necessary to reduce the amount of all ingredients by exactly 2 times.
