Ingredients

SAUCE
milk 80g
wheat flour 15g
DOUGH
sauce

fresh yeast 10g

raisins 80g

Cooking method

  • For the sauce, combine milk with flour, stir so that there are no lumps. Heat to 65C, stir until the mixture thickens. Allow to cool in a closed container
  • For the test Combine flour, sauce, eggs, yeast. Knead at low speed for 5 minutes.
  • Then add sugar, salt and knead for another 5 minutes.
  • Then add butter in flakes and continue kneading until a smooth dough is obtained.
  • Switch to second speed and knead for another 15 minutes. The dough should be firm and smooth, and come completely out of the bottom of the bowl. Let it rest for 30 minutes.
  • At the same time, warm up the apple juice and soak the raisins in it.
  • Then drain the raisins, dust with flour, and gently knead into the dough by hand. Give another 20 minutes of rest.
  • Then divide the dough into 12 pieces of 70 g each. each. Then roll a thread 15 cm long from each, divide it in half and twist it together, in the form of a bundle. Place in a greased mold, end down.
  • Breakfast Raisin Muffins
  • Store in the refrigerator, covered with foil overnight, for 10-12 hours.
  • In the morning, allow the test to acclimatize for 2 hours. The dough should double in volume.
  • Lubricate with an egg-milk mixture.
  • Bake in an oven preheated to 220C. First 15 minutes with steam. Then remove the steam and bake until the desired crust color.
