Pumpkin mini cheesecakes

Ingredients

Oreo cookies 12 pcs
soft cream cheese 200 g
eggs 1 PC
pumpkin puree 2/3 cup
flour 1 tbsp. l
sugar 1/2 cup
pumpkin spices 1 tsp
vanilla extract 1 tsp
salt 1/4 tsp
pecans (or what they are)
caramel pumpkin sauce
chocolate (melted)

Cooking method

  • Preheat the oven to 180 C (convection).
  • Take a baking dish (preferably silicone), put one Oreo cookie in each mold.
  • Pumpkin mini cheesecakes
  • Next, prepare the cheesecake dough.
  • All components should be at room temperature.
  • Using a blender or whisk, beat the cream cheese until smooth, add eggs, sugar and pumpkin puree.
  • Mix everything until smooth.
  • Add vanilla extract, pumpkin spices (cinnamon, nutmeg, ground ginger, cloves, allspice), salt and flour. Mix everything.
  • Fill each mold 3/4 full with the mixture and place in the oven.
  • Bake for about 25 minutes until tender.
  • Refrigerate to room temperature.
  • Now pour over pumpkin caramel mixed with nuts on each cheesecake.

  • Top (optional) can be drizzled with melted chocolate.

Note

Prepared cheesecakes can be refrigerated for up to 3 days in a sealed container.

I did not take into account one thing - the pumpkin is always different, apparently today I was very juicy ... and although I tried to drain the juice from it to the maximum, the dough turned out to be a little liquid. But these are the details that will be worked out over time!
Even the cookies were found yesterday, although they traveled to a bunch of shops.
The caramel is also cool with a pumpkin!

Indeed, pumpkin is always of different juiciness. This time I had a very sweet one, but not very juicy. But when mixed with other ingredients, the dough becomes quite liquid, about like thick sour cream, it's not scary. It bakes well and then thickens.
