Ingredients

Beef tenderloin 500 gr.
Lemon 0.5 pcs.
Onion (large head) 1 PC
Water 0.35 l
Mayonnaise "Provencal" 250 gr.
Salt taste
Ground black pepper taste
Parsley, basil (red), wild garlic 1 bundle

Cooking method

  • 1. Boil the beef, cool and cut into small slices.
  • 2. Peel the onion, cut into thin half-rings, add boiling water and let stand for 5 - 7 minutes.
  • 3. Drain the onion and pour the freshly squeezed lemon juice over the onion.
  • 4. Rinse parsley, basil, wild garlic thoroughly with running water, dry, separate the leaves from the petioles. Chop the parsley, basil with your hands, and chop the wild garlic with a knife.
  • 5. Add parsley, basil, wild garlic and onion to the meat. Season everything with mayonnaise, salt, pepper and mix thoroughly.
  • 6. Arrange in salad bowls and garnish with basil and parsley sprigs.
  • P.s Mayonnaise can be substituted with a mixture of sour cream and mustard.

You can do without it altogether. Or you can replace it with 1 - 2 cloves of garlic, which are first chopped and then crushed with a knife. You can add a little ginger grated on a very fine grater. The fact is that wild garlic has a garlic flavor, aroma and pungency, but there is no post-garlic aftertaste and smell after eating.
