Kalinovskie blue

Ingredients

Blue (eggplant) 2 pcs.
Onion 2 pcs.
Bulgarian pepper 2 pcs.
Tomatoes 2 pcs.
Bitter pepper (to taste) 1/10 pod
Garlic 2-3 teeth
Vegetable oil for frying
Sugar 1-2 teaspoons
Salt taste
Flour (for roasting blue ones)

Cooking method

  • My little blue ones, clean them of the tails and cut them into rings 8-10 mm thick. Put in a bowl, salt and leave for 30 minutes. Then drain the liquid (highlighted in blue), roll the circles in flour and fry in vegetable oil until golden brown on both sides. Put the fried blue ones on a dish in one layer. In the same frying pan, put the onion, cut into half rings. As soon as the onion starts to turn golden, add the bell pepper cut into strips. After the pepper is soft, add the tomatoes cut into thin slices. Now you can put the lid on the pan and reduce the heat. Let the tomatoes simmer for 3-4 minutes. Add hot pepper, cut into strips. For those who do not like spicy, you can do without hot pepper. Salt to taste and add sugar. At the very end, add finely chopped garlic. Turn off the heat and pour this hot mixture into our dish with fried blue ones. Served cold on the table.
