The dough for lasagna is the same as for noodles on dumplings. You can freeze, you can dry. At the master class, we did it on a dough roller and did not cut it finely, but directly in whole layers and put it in a mold. Since the pasta was fresh, only slightly dried on a "hanger", while the filling was being made, they did not cook it.
When I'm too lazy to make my own lasagna sheets, I buy. But I like more those that do not need to be cooked. The ones that I need, I can never cook properly, it sticks together. And I put the dry ones in a wide bowl with bechamel for a couple of minutes to get wet, and everything works out great. Just remember that dry pasta takes up a lot of liquid, and do not spare the sauce.
