Girls, and I make ice cream based on GOST 1939. That GOST included gelatin. I tried all sorts of options - with and without condensed milk. Recently I got hooked on such a recipe. 250 ml 33% whipping cream, 300 ml 3.5% milk, 35 grams of powdered milk, 10 grams of instant gelatin (I take others Otcher), sugar to taste (I try not to eat sugar, I make Fit Parade on natural sweetener) , vanilla (I have vanilla extract, vanillin can be used). You need to start with gelatin and soak it to swell in a minimum amount of water (I soak it in 60 ml of water). Then in a high cup, beat down the cream with a blender. In a separate container, mix milk, milk powder, sugar, vanilla. Heat the gelatin according to the instructions, cool to room temperature, but so that it does not have time to solidify, then pour in a container with milk, mix well and pour this whole mixture in a thin stream into whipped cream, continuing to whip it all. Then pour all this into an ice cream maker, set the timer to 30 minutes. It turns out tender, wonderful ice cream without any crystals.
