Pickle with brisket and kidneys

Ingredients

Beef brisket 500 g
Beef kidney
(400 g raw or 200 g boiled)
1 PC.

Carrot 1 medium piece
Bulb onions 1 medium piece
Pickled cucumbers
(the amount depends on your taste)
5 pieces.
Pickle pickle 200 ml approx
Vegetable oil for passivation
Parsley or celery roots, parsley greens
Water 3-3.5 l approx

Cooking method

  • In any case, the amount of food depends on your taste and preference.
  • The meat and kidneys look like this.

  • I soak the barley in cold water - while the meat is being cooked, this time is enough for soaking.
  • I put the meat in boiling water, add parsley roots. You don't need to salt the broth - only at the end of cooking! ..
  • I let the broth boil, keep it under a closed lid for about 15 minutes, then open the lid and keep it in this state for about 30 minutes.
  • The broth will be transparent. And since my broth in the finished dish should be light, the transparency of the broth is now important.

  • Now I put the barley in the broth, I continue to cook until the meat is cooked. The meat is fresh and will cook quickly.
  • During this time, I prepare vegetables.

  • I heat up 1 tbsp in a frying pan. l of vegetable oil.
  • Finely chop the onion, rub the carrots on a coarse grater, peel the cucumbers and also rub them on a coarse grater.
  • Carcass in a frying pan onions, carrots and cucumbers.
  • All these products must be pre-processed (stewed) so that they have the same degree of readiness, because if you put them in the broth raw, they will be cooked differently in time, and cucumbers in general can remain half-raw and very salty. This will spoil the taste of the finished dish.
  • Now you can add coarsely chopped potatoes to the broth. Let's wait until it is boiled until half cooked.
  • Now add stewed vegetables to the broth. If you do the opposite, then the acid from the cucumbers will not allow the potatoes to boil, it may remain firm.
  • We try pickle for the readiness of vegetables and the taste of sour cucumbers. The number of cucumbers depends on your taste - put more or less cucumbers.
  • After testing for the salinity and taste of cucumbers, you can add cucumber pickle (barrel) in the amount you need.
  • Let the broth boil, stir, taste. Now you can add salt and kidneys, and parsley. The kidneys do not tolerate long-term processing, so it is enough for them to stay in the broth for 5-7 minutes to be saturated with the flavors of the broth.
  • Bring to readiness also with the lid ajar.
  • We try, taste and add what we still lack to taste….
  • Everything, the pickle is ready!
  • Close the lid, turn off the heat and let the soup steep for 10-20 minutes! Let everyone in the pan finally make friends!
  • Now you can serve it to the table! Add sour cream to taste!
