Fine, airy bread was obtained in manual mode, if you knead in the "Pizza" mode, then wait 2 hours and bake in the "Bake" mode.
All attempts to master the automatic mode led to the fact that the bread turned out to be heavier and not so airy.
Yesterday I turned on the "Basic" + "Bake" mode again and found the following: leveling, kneading, the dough began to rise well almost to the edges of the bucket and suddenly, when the timer was about 2 hours before the end, the mixer turned on again. It is not visible, but by the sound it made several turns, the dough dropped. The next hour before baking, the dough could not rise, after baking it again turned out to be a heavy "brick".

What is this, a defect in my device or is it all intended in this mode?
Is it possible to somehow change the program or select such a mode so that repeated batching is not included?

When kneading, the bubbles of the formed gas (carbon dioxide) are evenly distributed in the mass of the dough, its quality improves, the crumb of bread acquires a fine, thin-walled and uniform porosity.

If possible, post a photo and a bread recipe that does not suit you, and also write what yeast and flour you use.

I used the recipes for white and black bread from the manual for the apparatus.
I tried different types of flour (Makfa, Sokolnicheskaya, Aro, 3_Melkombinata, etc.) and yeast (Aro, Dr. Oetker, Raspak). I didn't find much difference, it turned out a little better with Dr. Oetker yeast.
With the amount of flour 600 gr. the bread is 9-10 cm high.

Addendum: Found that sifting flour before kneading helps very well. The bread turns out to be noticeably more airy and light.
